THREE CHEESE SPINACH PIZZA | White Creamy Pizza Recipe

  • This creamy spinach pizza has a delicious savory, mild flavor. Pizza, where golden baked dough unite with white creamy filling, spinach sauteed in butter with nutty garlic and onion and topped with gooey melted cheese. It is a combination that you fall in love once you try! If you have never tried pizza with spinach before, look no further!
    Ingredients (for 1 pizza):
    Dough:
    Water(warm) - 100ml
    Salt - 3g
    Dry yeast - 2g
    Flour - 150g
    Oil - 5ml
    (+extra flour ~10-15g
    and oil for greasing form)
    Filling:
    Butter - 30g
    Onion - 50g
    Clove of garlic
    Spinach - 200g
    Cream cheese - 100g
    Light cream - 75g
    Cheese - 100g(50g into the filling, 50g on the top of pizza)
    Cheese Gorgonzola - 20g
    Diametr pizza - 30cm
    Weight ~ 700g
    Instructions
    Pizza dough:
    1. Pour warm water (25-35°C) into a bowl. Make sure it isn't hot, as the dry yeast won't work properly.
    2. Sprinkle the salt and dry yeast into the warm water and add the flour gradually(2-3 steps), stirring with a spatula as you go.
    3. Add remaining flour and keep mixing until it becomes difficult to mix, then start kneading the dough by your hands. On this stage put some oil and continue kneading another 5-10 minutes. If the dough too stick to the hands add a bit of extra flour, but do not overdo it, the dough should be slightly tacky to the touch.
    4. Grease another bowl and place the dough in it. Cover with cling film and let it rise for 1-2 hours.
    Filling:
    1. Dice the onion, chop one clove of garlic and cut up the spinach.
    - In a preheated skillet add the butter and saute onion and garlic, then add the spinach over them
    and wilt for 2-3 minutes.
    - Sprinkle salt and spices over the spinach. (I use black and smoked red peppers, nutmeg, and basil), stir in thoroughly and cook until the spinach leaves darken.(a few minutes)
    -Transfer the spinach mixture to a bowl and let it cool.
    2. Combine the cream cheese with light cream, then, stir in 2/3 of the cooked cooled spinach into the creamy mixture, grate some cheese into it and mix well together.
    Assemble:
    1. When the dough has puffed and doubled in size prepare parchment paper and transfer the dough onto it.
    2.Form the dough into a round shape, approximately 30 cm in diameter, by gently stretching it with your fingers. ( i recommend do it with your hands, as a rolling pin crashed the air bubbles (created during the leavening)
    3. Put the creamy-spinach layer over the dough and spread it evenly.
    4. Grate cheese on top and add the remaining spinach
    5. I put Gorgonzola cheese for a subtle, tangy flavor in the end ( but it is to your preference)
    Baking:
    1. Flip a rimmed baking sheet upside down and preheat it for about 20 minutes at 250°C before baking. ( or use a stone if you have one)
    2. Slide the pizza onto the hot baking sheet. Bake at 250°C for 7-10 minutes until the crust is browned and the cheese is golden.
    *On the video I made double proportion, but all ingridients above indicates for 1 pizza d30cm.
