The original change the 100 to a 1 is a kids magic box trick. I love magic for entertainment purpose but that flavor packet sleight of hand was too sloppy for me when he grabs the package and pulls the flavor packet from his right hand behind the package and not from inside the pack its obvious. During all that rigmarole where they bring out the box he has his right hand in his pocket sealing the bill into that packet but you are concentrated on the big box so you don't realize he stands deliberately in a way to block the camera from seeing him fiddling with it.

The question is how and when did he put the folded hundred dollar into the bag of noodle favor? Well, he did it when the lady brought in all the big box of noodles. That was a distraction to the audiences and Steve. The bag of noodle favor was already open and ready to insert the hundred into it.

How the hell did he do that
1:00 - Inserts $1 bill inside $100 bill then while unfolding $1 bill palms $100 bill
off camera - hides $100 bill
2:44 - 3:23 - While he keeps Steve busy looking into the packet, he is putting the $100 bill inside the other pre-made small packet with his right hand. He has a specially made "packet" that is open but has glue that he can re-seal after he inserts the $100 bill. This is the reason he has Steve select two packets, he needs the second one to hide his actions, and will switch the packets later.
3:35 - Gets rid of the first packet and switches with the packet that he has inserted the bill into...everything is all set now
