I make bags of veggies I use in recipes lately. All chopped and ready to go. Im going to start doing carrots and celery for the freezer too.

You dont subtract sugar to get net carbs. You subtract fiber from total carbs and subtract sugar alchohols from that
You don’t deduct sugar from the carb count, only “sugar alcohol”, which would be from artificial sweeteners
Net carbs are only sugar alcohols and fiber minus total carbs. FYI. ❤
I live alone, but often buy celery, which comes in humungous sizes. But what I do is use them as a salad base rather than lettuce. I do this with finely sliced cabbage, too. The last cabbage I bought was a five pounder because that is all they had. So I just keep taking chunks off of it to put in with chicken pieces, potatoes, or just to make a plate of cole slaw. Root vegetables last a long time in the crisper, but I try to use them every day or at least every other day, as I abhor throwing food away, and only do if there is something wrong with it, which is seldom. Making sure I get vegetables and fruits every day in my diet helps me work through too much produce. I also cook and freeze it if I can't use it right away. I have a fairly small freezer compartment, so using things up is important. Some people just keep throwing food into the freezer that they bought on sale (or not) and don't have a clue as to what is buried in there. That is a waste of money, because freezer burn sets in after awhile and the food is thrown out.
