      I use my bread knife all the time! It's amazing what a great job it does on just about everything I need to cut.

      A serrated knife with smaller serrations, like a steak knife, is probably better.

      @@lexotansteele2755 disagree. Chefs knife or straight edge utility knife is the way to go. Most cheap serrated knives (especially steak knives) are dull and actually tear the food instead of slicing it. Avoid serrated knives for almost all prep work.

      @@dirtyketchup I strongly disagree. Tomatoes, bread, and some meats are the only prep work items I will die on a hill saying to use a serrated for. If you are prepping a lot of items in your restaurant, spending time sharpening/honing your blade between every item will eat up your day. I have worked in massive kitchens before with 10 or more people working at a time, your time isn't as valuable in those situations, and I would sharpen by blade constantly. But now I work in a smaller kitchen, where the max amount of people working is 2. And 1 of them does all the prep work in the morning, while another comes in for service to help out. Making time a lot more valuable.
      We sometimes get students come in to our restaurant to work for their hours. All of our chef's have worked for over 20+ years in the industry, me included. And every student tries to educate us on chef's knives for everything. I am guessing you are a student, and you have very little restaurant experience, or you have a dream of chasing a Michelin star.

      Rub some of her lotion on them before you slice them, just a thin coating, like you'd treat a vintage leather jacket, it'll give her the taste she's convinced is missing 😉

    It’s a very nice technique but don’t ever ever forget to sharpen your knife. Using a dull knife or a half sharp knife will take out the juices more and losses the tastr of your tomatoes. Or worst you won’t be able to cut through.

    We did this with two line-pan lids at the restaurant. Does about 30-40 at a time. Fills up an eighth pan in 2 cuts easy.

    The thing about restaurant tricks like this is that they are useful when you need to slice hundreds of tomatoes per day and must work as a fast food machine.
    Sure I want marco pierre white speed slicing skills and tricks etc, but I also like marco pierre white on his philosophy of cooking without rush like it's a race after he became a home cook. My favorite recipes takes hours on the oven anyway..

    Got in trouble for doing this at a Restaurant once. They told me it was because sometimes when you cut it (sharp knife or not) it makes them look like they were cut at an angle sometimes. Good tip, but I guess can kinda be a little inconsistent.

    I used to work with a guy who cut all his tomatoes one by one. I showed him this trick and he refused to do saying he wanted his tomatoes perfect. Guy was just running out the clock. I still get heated when I think about it.

    Cool...now how do I cut into quarters? Big ol' cherry tomatoes cut in half are still a little big to put in a salad as I find the bites with tomato overpower the rest of the salad ingredients. But a quarter per bite is mama bear just right.

      In my opinion just keep repeating the same steps. And I really personally don't care about lining them up perfectly as long as they're cut in half. That's just my opinion though

      I'm sure many variations are possible. Sonny finds many needs for that quantity of tomatoes. If you need more, do it between two Dixie plates from Costco, whether the 8 inch or the 10 in, according to your audience. Depending on how deep it is, you can even use it on grape tomatoes.

    Those aren't Tupperware. Those are drink cup lids. Tupperware is a brand name and the product is far better quality than those throw away drink cup lids. You should call Tupperware and schedule a Tupperware party so you can know what Tupperware really is.
