Wow. My family's go-to Chinese chef, Lum, serves an AMAZING XO sauce at his restaurant. I was never able to get the recipe. This clarifies quite a bit in terms of ingredients and technique. I gave it a try before this, but with less than stellar results. I'm thinking that the roe and the sugar are things I had not added... They may be the key. And I had probably, ahem, "skimped" on the oil. (And, Jesse, I actually think that the final stage was finished in the oil used to fry the final ingredients.) Can't wait to give it another try. Don't tell my arteries.
We have these really large supermarket chains over here in the US and they all sell the same processed stuff full of poison to extend the shelf life of all the products. I have to travel 45 miles ever 2 months to the nearest Asian supermarket to stock up on the basic Asian food products that I use in my food preparation. Next time I go to stock up I will look for XO sauce... it would be too much to ask for too find a jar of Chef Sum Signature XO Sauce. I think they have all the ingredients...
Pixel8ed Hatter I’m assuming it’s just normal veggie oil, peanut oil is too powerful and would give the sauce a peanut taste which is not what you wanna aim for

Oh yes just from the remains of the ingredients cooking and added all ingredients back to the frying oil but no extra added water.
