The Pacquiao-Thurman boxing match reminds of the twilight years of boxing greats like Ali and Tyson when they overextended their careers. They still managed to with against bigger, younger and faster opponents but they also got hit plenty in the head which affected their mental health (specially Ali) in the longterm. So please Sen. IMO the reason why he's not retiring yet is NOT that he wants to "prove" that he can still fight despite his age. Based on his answers during interviews when asked why he still won't stop is because he finds greater purpose when he fights. He knows he is helping a lot of people in terms of providing jobs and inspiring a lot more people by what he's doing. He knows for himself he doesn't need to "prove" anything to anyone anymore.
