Chicken Kabsa (Simple Arabian Biryani With Grilled Chicken)

- Here is what you'll need!
Cooking oil 3 tbsp, Butter 3 tbsp
Cardamom 5, cloves 5, cinnamon 2 small sticks, Black pepper 5-7
Sliced onion 1 cup
Ginger paste 1 tsp
Coriander powder 1 tsp
Garama masala 1/2 tsp
Cumin 1/2 tsp
Red chili powder 1/2 tsp
Tomato 4 medium
Tomato paste 1 tbsp
Water 3.5 cups
Soaked basmati rice 2 cups
Chicken 6 pcs
Cashew or sliced almonds 10-12 pcs
Raisins 8-10 pcs
Instructions:
1. Using a large pot, stir in butter, cardamom, cloves, peppercorns, cinnamon stick and sliced onion in cooking oil
2. Fry until golden brown on low-medium heat
3. Add ginger paste, coriander powder, cumin powder, garam masala, red chili powder and a splash of water
4. Sauté for 2 minutes
5. Add tomato paste, whole tomatoes, salt and cook for 5 minutes
6. Place chicken pieces in the pot and fry for 5 minutes
7. Pour in the water and cover to cook for 20 minutes on low heat
8. Remove the chicken pieces from the pot and broil for 20 minutes
9. Add basmati rice, lemon slices and grated carrots to the pot
10. Cook for 10-12 minutes on low heat
11. In a separate pan, add ghee, almonds, raisins and stir until brown
12. Top the rice with chicken pieces and the nuts and raisins before serving
13. Ready to Enjoy!

@Movie Striker I didn't broil it actually. I let it cook with the rice. I guess broiling will taste much better but I don't have oven.

How did you use the basmati rice? Did you soak it before or put it directly from packet?

I lived in saudi for 15 years and ate khabsa all my childhood and this is NOT kabsa.. look this recipe is very nice but it is very very different to khabsa.. maybe this is a variant..

I believe variations are fine, but should never destroy the authentic aroma, flavour or the taste of those well kept traditional dishes. I was searching for the traditional cooking way of the Khabsa, and ended up finding more variations of it

But in Kebsa, I've never found any Carrots or raisin either!
Raisins are common although I've never had any khabsa with grated carrots before.
they do because I live in saudi
It has been developed over the years, of course, carrots and other additives, but not everyone prefers these additives, in general, Kabsa has many types
I tried it n it really taste like khabsa with tomato chutney which is called shatta in saudi so if u make this rice make a chutney too with it.. I knw d real taste of khabsa coz my entire childhood was spnt in saudi only...

What is "broil" the chicken? How do you do it & for how long?
Put them under the grill to give that charred effect. Just keep checking it everycouple of minutes it won't take long atall
