So im from Jersey....but work has me out here in Texas now. I just ordered a batch of taylor ham/Pork roll because we cant get it here. Crazy expensive to ship....SO>..i have access to wild hogs here and trap them....I think im gonna take this recipe and combine it with some wild hog to stretch it out and MAKE me some pork roll!! WILD HOGZ roll. Because I hunt, I already have the grinder, sausage stuffer, casings...etc. Im liking where this is going!!
Looks great...except that, if you are going to this trouble, you should be adding a lactic acid or a lactobacillus cure rather than the citric acid. And, the casing should be canvas, not that inedible plastic film. Plus, since you have smoked bacon as an ingredient, cooking in water is adequate because the smoking becomes redundant..

When it was first made, it was called Taylor Ham, but around the turn of last century, the FDA put strict guidelines on what could and could not be called ham. So, Taylor, as well as all other makers, call it pork roll. But some people still call it Taylor Ham. Sorta like down south, every soft drink is called Coke. "What flavor Coke do you want?" Or, some people call a sofa or couch, a Davenport. The Davenport company is no longer around, but some people still call a sofa a Davenport.

You should be able to get John Taylor Pork Roll at HEB.
That girl really likes handling that pork roll. Her face lit up when she wrapped her hand around it. I thought see was about to start stroking it.

Why not throw the spices and such in with the meat in the buffalo chopper?
Spices will not mix properly and stick to the sides only. Same when making sausage.
