I recently made this, because I wanted to teach a simple recipe for snacks to my niece and nephew. After experimenting a bit, I got the recipe tweaked just right so that one batch makes 12 ice cream sandwiches. I’m glad I got that all worked out.
So we had lots of family visiting recently because my father passed away a few months ago and we were holding his memorial. I made two batches the day before, one each with my niece and nephew. During the family gathering at the house, we had lots of food for everyone, but my niece was having a blast running around offering ice cream sandwiches to everyone. The fact that she helped make them made them even more of a hit, and I had to print out the recipe and hand it out to three sets of parents who were attending with their own kids. Thanks for helping make a sad day into a family memory my dad would have loved, Nino!
