    CANNING SWEET CHERRIES:
    Wash cherries and remove stems. Fill jars to almost the neck with cherries. Make a syrup of water and sugar. (I use around 1/2 cup of sugar to 2 quarts of water.) Fill jars to the neck with the water/sugar mixture. Can using your canning method of choice. (I cold-packed mine for 10 minutes in a hot water bath.)
    CANNING GREEN BEANS:
    Wash beans and cut off the stems. Put in jars. Add 1 Zinc tablet, 1 teaspoon of lemon juice, and 1/4 teaspoon of salt. Fill with water to the neck of the jars. Can using your canning preference. (I cold packed mine in a hot water bath for 1 hour)
    BLACKBERRY JELLY:
    5 cups blackberry juice
    1 pack low sugar Fruit Pectin
    4-5 cups Evaporated Cane Sugar
    1 teaspoon butter (to keep from foaming)
    Boil the above mixture for 1 minute. (be careful so it doesn't boil over!)
    Put in jars and can. (I cold packed mine in a hot water bath for 10 minutes)
    CUCUMBERS:
    * The bread and butter pickle recipe will be in my sister Marlene's cookbook, coming soon!
    FREEZER PICKLES:
    6 cups sliced cucumbers
    1 cup thinly sliced onions
    1 cup vinegar
    1/4 cup water
    2 cups sugar
    2 tablespoons salt
    1 teaspoon celery seed
    Mix vinegar, sugar, water, salt, and celery seed in a saucepan and heat until the sugar is dissolved. Pour over the cucumbers and onions. Stir. These pickles will last for a few weeks in the fridge. They can also be frozen.
    BUTTERHORNS:
    Mix together:
    2 1/4 teaspoons yeast
    1 tablespoon sugar
    Beat in 3 eggs and 1 cup water. Let stand for 15 minutes.
    Add:
    1/2 cup sugar
    1/2 cup shortening
    1/2 teaspoon salt
    5 cups flour
    Knead well. Cover and set in fridge overnight.
    The next day, divide the dough into 2 parts. Roll each part into a 12" circle. Cut into 16 wedges. Roll each wedge up, starting with the wide end. Put in a greased pan. Let rise for 3-4 hours. Bake at 350 degrees for 10-12 minutes. Brush with butter.

    Hi Mary... just recently stayed at your cottages with our dear friends. This was our second time. We loved every minute. You have thought of everything one might need while staying. The blackberries were big and beautiful there. Thank you Mary for all you do. We have met you in person a couple of times and you are the sweetest and kindest person.       I am a local . I live close to Mary, When ever I drive into Berlin. I drive right by Mary’s Cottages . They look so pretty setting up on that little hill.

    I enjoy seeing your husband working with you! My brothers loved canning all their lives. Maybe it was because we would all can fruit together in summer and enter some in the fair with 4-H. Very find memories!💐

    When I retired five years ago, we got back into canning. I used to can when I was newly married. I started with a stock pot and a tea towel on the bottom. I got second hand jars and started with tomatoes. I canned everything from jams to meats. I love pressure canning veg beef soup. Pop it open and heat for supper.We have a produce auction house within driving distance and sometimes I over buy and then can up a storm!!! Canning is a lost art. It is nice to have food on hand. I use my jams and jellies for gifts.

    A video full of nostalgia! We canned and froze everything, including beef, fish and game, at my grandparent’s old farmhouse. She made a refrigerator dill pickle that was fantastic. To this day, I am grateful to have experienced that life!

    Something so peaceful and comforting about your episodes. Really loved this one! I grew up in rural Alaska and canning was a way of life. Picking berries (watch out for bears!), making jams and pickling. Gott segen eich!

    I was shopping several years ago at a local Mennonite grocer and came across Christmas Jam; never heard of it, let alone seen it prior to that visit. Bought a jar, and fell in love. I found a recipe; now I make it regularly. Can’t keep it in my pantry. I’ve given it away at times. I get asked from time to time if I have any more jars left. My pantry is currently empty of this delightful treat. Time to pull out the jam making equipment and make up a batch! ❤️

    For my jam… after I put it in the jar and screw the lid down tight I flip them upside down for about 10 to 15 minutes. When I turn them upright again the jars will seal really quick 😊 avoids the hot water bath to seal the jar!

      You are right that you can skip the water bath, but only if you fill and seal 1 jar at a time. When you fill all the jars then put the lids on them, temperature change has occurred and the chance of bacteria starting is higher. And I have never turned them upside down. I have seen people who have online. But I still don't understand why.

    Your canning reminds me of my granny. She always canned mushrooms, pumpkin, pears with cinnamon and many other. It was in the 60ties and 70ties when I was a child. So much good memories. I loved her so much ❤

    I really admire you and John for working together on projects around the home, in the home, etc. I have never married mostly because I have not dated anyone from church.     Wow! All that canning you did brings back so many memories of my mom and me spending hours in the kitchen canning pickles, beets, green beans, mushrooms, tomatoes, peaches, etc., etc., etc. Additionally, we made jellies and preserves. Unfortunately, my mom passed more than 30 years ago and I miss that time we spent together. I thoroughly enjoyed this, for me, walk down memory lane. Thank you, Mary.
    P.S.: Your canning method is identical to the one we used.

    Hi Mary, I've been a subscriber for a few years now. I've never been disappointed. You waste nothing, and preserve whatever you can. I think that is how things should be. What you learned growing up, I'm sure was handed down for generations... That's the way I believe things should be. Know what's in your food, share and exchange, learn to be frugal and yet plentiful in so many different ways. Just to have a reliable community is priceless. Thank you for sharing. I'd love to possibly purchase things that I can work with without electricity. Thanks again for all you do. Maybe we can stay at one of your cottages some day. -

    I’m sat down and my feet are up….just finished 23 quarts of peaches and 8 pints from some “seconds” my husband found in his travels across southern Indiana earlier this week…. finished of round one of green beans Monday, they’re in the freezer….tomatoes and peppers for salsa and spaghetti sauce are ripening nicely….it’s such a fun time of year. Hard work, yeah, but Some ppl quilt or sew or knit or re do furniture…I can garden stuff… makes me feel accomplished!

    I grew up picking produce in my dad's garden that he grew every summer - I remember the sweat rolling off my nose! We called green beans - snap beans. We'd sit on the porch with a paper grocery bag full of snap beans - snapping the ends off and then snapping them in half or thirds. That's one of my best memories of growing up - I sure do miss those days with my dad on the porch!

    I canned food from the garden for the first time this year. I canned bread & butter pickles, cowboy candy, and diced tomatoes! Every jar sealed. I’m very excited to have food preserved and its comforting to know every ingredient that was put in the jars.

    I enjoyed watching this so much! I grew up helping my mother garden and can and freeze our produce. I live in the city now and I miss this so awfully much. Those blackberries were really nice! I’m intrigued by that slicer! I have a food processor, but this looks easier and faster 😢and doesn’t need power. Thanks for another great video! 💜

    Thank you for this video. I also was raised with my mother preserving every bit of bounty she could. We always had a huge garden and had access to fruit trees. I got away from it after marriage but have recently started to can a few things. And you’re right, it gives you so much satisfaction to provide for your family this way. Cheaper and healthier for you! And usually tastes better too! Thanks again.

    I have stumbled upon a pectin source I had not heard of before but, is working well for me. We had a large windfall of apples last year and it felt like such a waste. I found online that I could mash, boil, strain and then use as pectin. I’ve made plum, strawberry, cherry, pear and apricot jam with it and all have jelled well. Again, I enjoy your videos and the pleasant way you share your hard work!

    Boy, this brings back memories for me of my childhood. We canned just as you do. We also made a lot of strawberry jam, and canned endless tomatoes. Thank you for sharing this. More people need to learn how to do these things. And as you stated, it's so very satisfying.

    I planted my green beans a little later this year so they are just now blooming. Best thing about green beans is they bloom and produce for many weeks.

    OMG Mary, I love watching your canning session. I make freezer pickles too .
    Also your croissants look so delicious with that fresh jelly. My grandmother made a roll that looked like that, but then it was with cinnamon on the inside and then the top had a white glaze with crushed pecans and then the other one would have the glaze on the top and would have lemon zest .I wanted to take a big bite with my hot tea.! 😂

    I have that cutter it came with my cookware 51 years ago it still works great. I haven’t cold packed beans before, but it seems easier than pressuring them.

    I've been canning jams and jellies for years. I never thought to put my jars in an aluminum pan to fill them. Ingenious 😊. Clean up must be a breeze. I always learn something when I watch your videos.

    Thank Mary! Another awesome video! Something everyone needs are the brooms at these stores! Not just the soft sweep ones but also the green bottom ones,with longer handles and the orange ones for cement. I used to take my brooms along as a housekeeper and my clients ended up always buying some.

    I used to can and make jelly but not anymore. A canning kitchen is wonderful. Keeping it out of your kitchen really is great. 😊

    Beautiful video-a couple working together for their family❤. Mary, we put fresh snap beans (green beans) like this: Clean, remove stem end and other end. Cut or leave whole-your preference-we did them both ways. Then we lower them down into boiling water for three minutes-remove and plunge over into ice cold water. Remove and put over into the glass canning jars or ziplock freezer bags-whatever you prefer. But the three minute "blanching" in boiling water retains the fresh bright green color.

    What a great idea to offer those hard to find items. I ordered the dishcloths because a good dishcloth is hard to find.

    This video brought back so many memories for me. I used to snip green beans on the porch and help my mother can them. Also canned corn and tomatoes, juice, and whole ones. I got to use the collendar to juice them. And we had a 'root cellar' for the canned items. Southeastern Ohio.

    beautiful..every thing looks so yummy. it sure is nice to have a well stocked pantry of home grown yumminess. My mom and I really like the looks of your butterhorns. i will be down your way next month, and going to stock up on the candy onions to dehydrate so we can have them all winter long. (one of my favorite things in holmes country) thx marie from canada

    Get you a camp chef and put it on your deck , can do your water bath that way ! Works great can fit 2 big pots on it . 😁

    This video took me WAY BACK to my youth and helping mom with canning and freezing. It was how my family could afford to eat. I have to admit that it brought some tears to my eyes and missing those times. We made everything you did, except the cherries, in the video including our version of butter horns. I noticed that you did not pit the cherries. How will you use the cherries? Thank you for making this video. I appreciated it.

    This video reminded me of my mom and dad canning tomatoes, dill and sweet pickles and pears. We had a freezer - so beans and corn off the cob went there. A friend from Pennsylvania always shares her canned dilly beans and Dutch Apple…a great treat for sure. We get together and often exchange some jellies…jalapeño jelly is my favorite. Thanks for sharing….and bringing back good memories for me :)

    Mary really enjoyed watching this video. I use to can, and I done the water bath like you did. I always enjoyed canning. They all looked so pretty. I use to make beet jellt it was so good. Thanks for sharing with use. John was a big help to you as well.
