But you hold her in your heart and, in the end, that's what really makes us who we are; they live on in the way they affected our lives and our approach to living. Oh Man! That grinder looked great! I get what you said about your Mom. My Mother passed away in 2015, and now, there seems to be a thousand things I wish I would have asked her, or said to her. I think it's the same for all of us who have lost our parents. You're not alone in having those feelings. Just cherish the memory of your Mother and know that she taught you everything you needed to know. Sorry to get so mushy but you got me thinking about my own Mother. One of these days, I'm driving up to New London to eat at your restaurant. I hope I get to meet you too.
You are a great teacher. I learned from a solid guy just like you when I was 16-17 years old (worked my way up from dishwasher-line cook). I'll never forget my mentor John Bishoff and his Mom, Marge. Now retired at 62, I love cooking and learning...you're the perfect combination of both. All the best, Alan.

Memories always make for better flavors. Friends don't understand why I'm crazy about grappa, polenta and such. It's the memories of family Sunday dinners that make things taste better. Just like I don't understand why anyone would eat polk salad, but I have friends that love it. Love your videos Jack. Always look forward to them.

Almost everyone has heard about the "Philly Cheesesteak" ... but "Roast Pork " (usually w/ rob) is popular too. You two are experienced at "the stance" ... HaHa ... eating standing up ... and not dripping on your shirt. Every kid in Philly learns that at a young age. We used a "slicing" machine like the one you have to slice down the chilled raw ribeye or top round to make Philly Cheesesteaks or warm cooked Roast Pork for sandwiches. FYI: To find the best "local" places, I ask a "local" ... "Were would "YOU" go for a good Cheesesteak or Roast Pork sandwich???" And remember ... I've found the best food comes out of small family operations ... hidden in the neighborhoods.

What did you season that roast with Jack? I usually make a bottom round beef roast once a week and just use salt, pepper and garlic but this week i think ill make a pork roast
