Doing a 15 lb packer overnight tonight on my YS640 with the everything bagel rub. Can't freaking wait. It's amazing on a roast as well....FYI. Can't wait for supper tomorrow! I'll do 180 for 12 hours, wrap in paper at 165-170 to push through the stall to be resting in the cambro around 2pm for when the kiddos get home from school. Can't wait. Never thought of that rub on a brisket. Keep up the good work and love your channel!
I made this last week. Lightly salted and wrapped in plastic wrap overnight, then seasoned with the SPQR + pepper, then cooked until 195 (no wrap) on my pellet smoker w/ smoke tube (first 5 hours), then held in turkey roaster at 150 overnight. Came out great...thanks for the new seasoning suggestion!

I don't recall if I've seen you do any long rests after the cook? ie, letting the unwrapped brisket come down to about 180°~170° and then resting at low temp for 8 to 12 hours? ....it's really next level.
This is the second time I use mayo on a brisket and there is a bit of richness on the surface so I'm going to say yes. I mainly used it to help bind the seasoning but the flavor is so good too. 👍

That looked amazing! Also of interest to me, the pellets you used here. I haven't tried it out yet, but I've been wondering if you could use pistachio shells as a pellet grill fuel. I've used them as a smoke element in some of my charcoal BBQ endeavors to great success, and they use them in Turkey as fuel for fires, so it seems natural to me (if they feed and don't mess up the auger) that you could use them in a pellet grill. Now I know there is at least the pecan shell version in a pellet form. I like pistachios and hate to throw away the shells if they can be used for something. I'll let you know how it goes!
