- Long time experienced guide Billy Howell shows you the proper way to clean a Redfish, Speckled Trout, and Flounder. He explains the right knife to choose and why, while giving you some tips on how to keep your knife sharp. This is a must see to clean a fish.
Should rinse the knife after sharpening as to jot get the shavings in the fish. Just to be safe.
What kind of fillet knife
Worked commercial and charter boats. Then fish markets. The victorinox knives with the fibrox handles are the knIves of pros. No gimmicks. Just razor sharp, high quality steel, and no slip handles. I recommend a 6, 8, and 10 in boning knife. Semi flexible. Not flexible.

We call the throat of the redfish Quail. Looks like a quail on the grill, tastes like heaven.

Billy does a good job for sure, I do similar ,but I can hold my trout upside down and cut out the belly and all in first swipe. I also use a saw zall with a filetzall blade on Redfish and I have dremeled a few as well to fit my sawzall, trust me when you are cleaning a pile(Reds) it is well worth it ,as well as time.Great job as always, best of luck in the second half of the year
what kinda knife he was using with white handle to start off with the redfish?
It’s called a Mundal, he said they are hard to find, atleast that one. Has a serrated edge.

You wasted that whole halibut....
Heck yea I wasn’t cleaning it but, I really don’t know what I’m doing. I didn’t even know you could catch halibut in 3 foot of water in the bay in Galveston I was shocked.
