    You over cooked it, season it, sear it real fast in a pan no more than 30 seconds, tent it in aluminum foil with butter, heavy on the butter, garlic, lemon slices and pepper put it in the oven on 350 for 10-15 minutes...should come out super tender and juicy.

      @@josh-zu1jn Actually, anything that comes out of the ocean stinks like the ocean, but once you've cleaned it for cooking no it does not have a stink........if a piece of fish stinks it's NOT fresh don't eat it. For example rule of thumb when going to a sushi bar, when you walk in the door if you smell fish.....walk out the door, fresh fish does not smell ( stinky). To more directly answer your question.....Everything will stink when dead, the key is how long has it been dead....there is a difference between fresh and dead. LOL

    Soak the meat in milk for a few hours! Does amazing things for the shark texture and taste. I tried it a few months ago. It also helps get rid of the urea smell. :)

      Buttermilk over night, as in at least 12 hours!! Milk softens texture and reduces gamey flavor plus acidity of buttermilk breaks down the connective tissue amazingly!! Been eating multiple species of shark for over 2 decades ...........and this is my number 1 trick.

    Your knife ripped through that shark like butter. Nevertheless, here in Trinidad and Tobago 🇹🇹 the best tasting dish is most likely bake and fried shark. Its a tourist favourite, a local favourite, and my favourite. The key to it is to get a shark that weighs no more than 20 lbs, and if it does, the meat should be smashed or tenderised and battered and fried. Then served very hot with a mixture of ketchup, honey mustard and tabasco sauce. It is the most delicious thing you will ever eat. DATS UH FACT JACK!!! Ohh and thanks for the vids Mr Arrington.

    in south africa we soak our shark in milk for 24hrs to get the ammonia out, then wash it then beat it with a meat mallet, makes it super tender and delicious !

    That's why we usually catch 3 ft sharks at the biggest. Not as tough, still a little bit chewy, definitely shark, but its better.

    Make a tin foil packet to cook them. It will come out more tender. Put onions, and papper in the packet with tiger sauce.
    I learned that trick from the locals when i lived in cuba.

    Oven Braised Shark Creole is amazing. Make a basic creole sauce, but add lime juice to the braise. Cube the shark and mix it into the sauce. Cover everything with foil and bake til tender. Serve over rice. The only way I've ever wanted more shark. Great vid!

      Bleed and gut immediately after catching. It greatly reduces the ammonia flavor imho.

      I agree with the smaller is a lot better. I've eaten a lot of them, all brained in milk and salt, and sauteed

    I tried shark once in my life.... It's delicious! I can't believe you didn't like it.... My method was I put the shark in an aluminum foil pouch with onion, butter, lemon juice and seasonings.... Seal it up and bake or grill it.... Nothing better....

      Taj Lewis no you have to gut it before you kill it to ensure they don’t leak the ammonia into the meat from their organs. Milk works good too but there’s better uses for milk out there lol

      If you cut the gills on one side or cut the artery just in front of the tail and bleed it out itll taste fine without wasting milk

    I had black tip I caught once and I baked it with lemon pepper and a fresh squeezed lemon and stuck that in with the foil and closed up the foil

    Caught a 50 pound Mako off Newport Beach, Ca at 8 mile bank. Cooked it three ways. Same result:
    Tough meat and very dense chew
    It wasn’t bad. Just wasn’t good. Thank for the video

    Love Shark Steak. Use to catch them in the Keys a lot. Only difference is I soak it in Buttermilk to help tenderize the steaks and remove some of the gaminess.

The way I have cooked shark on the grill is get foil paper then place it in the middle of the foil with vegetables (onions, peppers, potatoes) seasoning and wrap it up closed and slow cook it, the meat will be juicy and tender rather than the pork chop experience by slightly frying it. I have had it the way you done it before also... Keep the videos coming i enjoy them alot....

    Shark is excellent! Can't over cook it though. Sauteed in butter, garlic and lemon with your favorite spices/herbs and it's incredible!

    I'll hit it on this show. Go fish the surf for a 20"-30" black tip. Bleed it out by cutting tail off. Ice it then clean it. Drop your normal filet with it and then cut each filet into thirds. Lite Nonstick pan and do butter and blackened seasoning , cooks fast at medium heat may be ten minutes. Tender not pork chopy. Go for the smaller one👍it will surprise and it will be like your one meal pig size for six with sides

    If anyone has never caught a shark, or even handled one. Imagine covering something in 200 grit sandpaper and then urinating on it and set it out in the summer sun all day. That's the texture and smell.

    I love pork chops but since it tastes like pork chops, I'd wrap the Shark 🦈 Meat in Bacon and bake it. Bacon is so EXCELLENT for flavoring foods.
