How hot does the mango puree have to get to deactivate the enzymes which prevent the gelatin from setting?
Bring it just to a boil, and the enzymes will break. It also works for figs, papaya, kiwi, pineapple and ginger.

You can use agar agar.
What will be the quantity of agar agar?
I'd put one gram. You need to boil it with puree and sugar, cool it a bit and mix with whipped cream.

Use the same quantity of powdeted gelatin in grams. You can substitute dates with raisins.
