    Years ago I watched a video of a Baker explaining Baker's Percentages with examples. I agonized for hours making a spreadsheet that would calculate these things for me, so I could easily create or double recipes. Foodgeeks Baker's Calculator is absolutely superior in every way. I am slowly putting all my recipes into this calculator, and it has made my bread baking much easier. I send proven recipes to my daughters so they don't have to spend time making mistakes. That's my job. I highly recommend this calculator.

    I’m a new fan, and really appreciate these videos. I started learning about sourdough 8 weeks ago, when I made my first starter, “Maury”. After a couple of weeks of starter trial and error, I finally got it right, feeding him twice a day, and he is on a predicable rising schedule. I’ve made 4 loaves so far- the first two (which were great) were better than the second two- the second bake I didn’t realize my hydration was too high and the dough flopped out. Your videos and this online tool are great resources, thank you for posting them! I’m doing my third bake tomorrow, paying more attention to exact percentages.

    Very informative!! I am glad I found this calculator as I was doing another recipe and the dough was very wet. After using your calculator, it show the recipe was 85% and thus the reason it was difficult to work with.
    Do you have a video that talks about hydration advantages or disadvantages?
    Also the ratios of bread flour and wheat flour? Thanks

    Just a thought, if possible could you add a reverse feature to that calculator? A feature where you enter your desired hydration and dough weight and it will give you the proper ingredients by weight?

    Great calculator! I think a very good addition for working with sourdough would be a fermentation time calculator. I have seen them separately but it would really complete your calculator.

    I'm finally getting the whole hydration thing down--thank you!--what I DON'T understand is factoring-in the starter's hydration. If you've been plugging along for several months as a newbie (ME!) trying this and that source of sourdough techniques you probably have a pretty healthy, well-developed starter. But, boy, I sure don't know what its hydration % is. What does one do if they want to follow your instructions perfectly and they haven't a clue as to the starter's hydration?

    I recently got into making my own sourdough and decided to make a little excel sheet calculator (because I'm a spreadsheet geek and I need no excuse to whip out excel 😂).     Dude, this is rad! I'd been keeping some of my recipes in random google docs, but just saved today's as a PDF from the calculator!
    Also realized that despite being a very number-literate person, I made a small mistake (0.5%) in calculating my target hydration. Always better to have a tool once the theory is understood and very thankful to you for making it :D. Love your vids!

      I have and use the bread calculator. I'm another geek, and I've been using Excel spreadsheets for this for years. I cross-check with them, they line up as expected (I suspect Sune is a pretty decent programmer :) ). I have a certain comfort level with seeing the underlying formula, and so I end up using both.

    Thank you, Sune, for generously sharing about bread baking and for the fantastic dough calculator. What is "Innoculation" in the calculator and how to use it.

      Inoculation is the amount of starter in the dough. Press the button to change the amount, but keeping the hydration and total weight the same 😊

    Growing up in the 1970s in the US, they also thought us the metric system in elementary school in hopes the country would one day switch to the metric system. It never happened, so we never had to use it and therefore, never retained it. I haven’t heard any talk of a switch since!

      Due to the way it saves the recipe there is a practical limitation on how much data can be in there. I'll have a look and see what it is :)

    Is the yeast in the calculator only for fresh yeast? So if I was to convert a recipe that uses active dry yeast, would I put double the grams of yeast of what the recipe calls for into the calculator? Thanks! This is probably one of the most revolutionary tools I have come across for bread making, thank you for taking the time to create this and share it with all of us

      It doesn't actually convert the amount of yeast, but will let you choose the inoculation of sourdough into the converted loaf :)

    Hi, first of all congratulations for the great work you are doing for us, and because i'm a "beginner" in how to make bread, i'm a bit confused when you talk about preferment and starter in your bread calculator, preferment and starter are not the same? thanks a lot!

    Thank you very much!!! This is exactly what I needed. I've seen references to Baker's Percentage and what it is, but rarely do I see a proper explanation on how you actually use it. I'm always left confused and don't feel any wiser. But now I should be able to put it into practice!     Thank you so much for explain and understand how to use Baker's Percentage. I was wondering can I also use this formula for making cheesecakes and if so how since there really isn"t any flour for the filling (only the crust if it"s a cake like crust).

    Love this tool! I shared it on my facebook. :) It appears the salt % in the totals section on the right doesn't match the salt % in the ingredient list. Looks like the % in the totals section is the accurate percentage. It shows the correct % on both sides for yeasted recipes though.

      I just confirmed, the salt percentage in the ingredient list is calculating based on the salt/flour ratio not including the flour in the starter. The salt percentage in the totals is calculated on the flour including the flour from the starter.
      The reason they match in a yeasted recipe is because there is no starter, so no flour there.
      You may have noticed the water percentage in the ingredient list doesn't match the hydration percentage in the totals. This is also because of the starter.

    @foodgeek. I love you videos and how you are prepared to try different things and bring them back to keeping it simple. In one of your videos you mentioned how you like to autolyse for 4 hours. So you got me thinking, in order to make the most of a persons available time during the day (work and stuff) where you can’t let sourdough dictate your working day- have you done an experiment where you do overnight autolyse (countertop or fridge) with different hydration levels where a normal 12% protein flour is used? Just thought it maybe something up your street - if you feed your starter overnight maybe the autolyse could also be done at the same time...... or can you?

    Just one thing I don’t understand, when I put 200 starter in the formula, it shows only 100 in the preferment part of the stat... something I’m missing?

    Thanks for the detailes videos and. this one too. The flours availble easily in the market, here in India are way different than those avaible in US and Europe. May be its because the wheat is harvested in spring and milling is also different. Bread flour and Rye are expensive flours as compared to whole wheat flour avaible in supermarkets. This caluclator is going to be ver helpful for me to do my trials, with store bought flour and experiments with adding multigrain flour - which I make at home using millets and cereals and spices.

    Love this! am currently trying to work out to change a baguette recipe from dried yeast to sour dough starter. the bread calculator gives me the math for the main dough, but not for the pre-ferment. Any tips as both require a starter/yeast element.
    These are the numbers for the pre-ferment
    450g Strong White Flour
    7g Salt
    290ml Water
    2.5g Yeast
