Ingredients:
Butternut Squash: Use the neck, cubed
Kale: 1 packet, washed
Chickpeas: 1 can, rinsed
Coconut Milk: 1 can
Ginger & Garlic: Finely chopped
Cumin Seeds: 1 tsp
Green Chillies: 2, mild, chopped
Red Onion: 1, chopped
Cooking Oil: 2 tbsp
Spices: Salt, cumin powder, coriander powder, turmeric powder, Kashmiri chilli powder
Method:
Prep: Cube squash, wash kale and chickpeas.
Sauté: In oil, cook cumin, ginger, garlic, chillies, and onion.
Spice: Add and cook spices, then squash; cover and simmer. And salt to taste
Combine: Add a bit of hot water, kale, and chickpeas.
Finish: Stir in coconut milk, heat through.
Serve this nourishing curry with hot boiled rice for a complete meal.
