I'm getting fluctuation gremlins like this and I'm using a brand new pit boss pro series 4 v2. I've got mine figured out that I run it at 280 for the first 2 hours if I want 250 and then I can gradually being going back toward 250 (if I want 250) the longer my cook goes on. Apparently pit boss think this is normal... OK, so why doesn't this happen to Grill Sergeant on his Brunswick then?!?! I think Pit Boss need to start putting out some firmware updates via the Smoke iT app.
The Brunswick is a big boy if you are doing large cooks most of the time like weekends, holidays, catering, hosting, then the Brunswick will work fine it will carry the load it has a large interior for large Cooks when I’m using mine I’m usually cooking 6 to 9 slabs of ribs 3 to 4 butts or shoulders because I cook for all of my kids and they DoorDash over to get their‘s when we have family get together‘s holidays I cook for the events, but if you’re doing smaller cooks most of the time then a smaller smoker the pit boss pro sold at Lowe’s would be a better value if you don’t do that large of a cook most of the time it’s more for a family of 4 to 6 people not a lot of maintenance, is efficient and doesn’t take long to heat up when you open and close the doors. Now if you don’t cook a lot of large meats such as ribs, butts, shoulders, briskets, but more like steaks, burgers, chicken, fish, then your next option would be a pellet grill rather than a smoker. pellet grill will give you the best of both worlds being able to smoke small portions and grill at the same time and most of your pellet grills are feature rich with Wi-Fi Bluetooth built-in meat thermometers which makes them a better choice for quick traditional barbecuing. I hope this helps, just do your research, what do you like to cook, what do you cook the most, how large are your cooks, what meats do you cook? steaks, burgers, chicken or ribs butts, shoulders, what’s your cooking style these are some of the things you have to ask yourself to determine which unit will best serve you, when you think of smokers you think a low and slow cooks. Steaks, burgers, fish, chicken faster cooks then pellet grills will be the better option
I just had one delivered today, havent even seen it yet as im at work for 14 days. Im thinking of sending this thing back, cuz every video i see on it, Seems to me its a big peace of crap!

I’m thinking about making the Brunswick my 1st pellet smoker. What should I be aware of?

How is it with spritzing? If you open the doors to spritz does it loose all heat? How long to recover to be proper temp?
I saw other vids that say on this smoker to run with damper all the way open when above 250. Maybe this would tighten up temp swing?
So is one of the things you are demonstrating here that it overshoots 150 by a lot when set to that 150 smoking level? Did you find solution?
Mine is a POS. hasn't worked properly since day one. The wiring harness inside the machine is faulty and pitboss won't do anything about it.
