      I'm sure you're busy but just a couple of other things when I think about it...I've asked for your book for my b-day and the next time I'm in Porlock I'm going to go to your noodle bar (if it's open) but from one Somerset lad to another "Potato Slurry" WTF!? You've got to come up with something better than that...it makes us sound like proper carrot crunchers!😉😂 Anyway enjoy your show, you have a really sweet relationship with your Mum, keep up the good work.👌👍

    Dear Chin and Choo,
    My wife who claims to hate Chinese food, has eaten the majority of the satay I made MYSELF.
    Your channel has given me tremendous pleasure when we can’t spend on eating out ... we’re buying a house.
    Thanks a lot!

    Beef Satay has been a personal favourite of mine all my life. Now you have shown me the sauce that the take aways use. I bought a jar. I've just cooked it for myself and it is 100% like the take away version. Thanks you very much 👍

    I've watched all of your videos, more than once. Now I'm starting to understand the flavours / techniques so I can invent my own "fakeaway" dishes. A beef satay with noodles and beansprouts like a "Satay-chowmein with sauce" is my current favourite. Happy Cooking!

    Thank you for this. I'm tired of seeing recipes with their "satay" that is just peanut butter thrown over everything. For the life of me I couldn't work out how to use Jimmy's Saté Sauce properly (I'm a complete novie at cooking - Super Noodles are a challenge for me lol) and now I finally understand how to get it done properly without it ending up as a burned or watery mess.

    Jimmy's should carry a warning. Once you've opened the jar and made satay, it's ngh on impossible to not eat the rest spooned straight from the jar within 24 hrs.

    It would be better if you described what was in the jimmy sauce, and what it tastes like, as most people think satay is spicy peanut sauce , iv seen loads of your videos where you don’t quite explain what’s in a sauce out of a jar, or you don’t describe what the dish tastes like , I love this channel and I just think that little bit of explanation would go a long way , as not everyone knows, or maybe they’ve been in a takeaway seen a dish on the menu but didn’t want to order it cos they didn’t know what it was , this would really help a lot of people 😍

    The 90% that don't bother putting the nice finishing touches or skip steps because of cheapness are the ones I avoid, what I do is order the same set of dishes from a few different takeaways, the ones that taste the best, I stick with them. So maybe the really good ones are like you guys who do a little extra and are able to get the repeat customers.

      Potato was an over sight, so you need 1 dsp per kg of beef and water you only need if the beed is dry, but we figured out thats because we are taking in takeaway where its hit and we prep 20 kgs at a time so it has time to dry slighlty

    Instant sub from me have been on a mission for years to learn how to recreate chinese takeaway food as so many of my local shops have changed how they prepare their dishes for the worse - what is it with the insistence on sloppy mess chicken in gravy slapped over fried rice for chicken fried rice these days ? it always used to be dry with diced up brown meat chicken. can you please please do a vid on the satay skewer sauce

      @ZiangsFoodWorkshop  6 ปีที่แล้ว

      Peter Straker how did you try to tenderise it? You need to leave the bicarb to work over night for best result.. 30 mins wont do much

    • @ZiangsFoodWorkshop
      @ZiangsFoodWorkshop  6 ปีที่แล้ว

      Freezing once marantated, which loads of places do also helps loads to. The ice crystals that form cause the meat to bruse abd go tender.

    • @pstrakes
      @pstrakes 6 ปีที่แล้ว

      Hi,
      I left the meat for 48hrs in the fridge.
      I think I need to slice it more thinly, the butcher sliced it fir me and whilst chunks weren’t too big they could have been smaller...
      I’ve read about dissolving the bicarbonate into a brine, have you thoughts on that?
      I think my strategy next time will be...
      1. Marinade and freeze for 24hrs.
      2. Leave in fridge for 24more to give the bicarbonate to work at a higher temp.
      Thanks as ever.
      P

      Peter Straker even if its thick it should of tenderised, how ever the beef is always sliced very think for quick cooking. How much bicarb to weight of meat? And no worries, love helping 😊😊

      Chicken is never marinated and no we don’t and many won’t use peanut butter. Traditional it should have crushed peanut but most takeaway last won’t add it as it’s expensive

      Most intolerance to msg isn't the msg. It's almost like being intolerant to salt, the BBC covered it but extensive research shows that it's more likely the large amounts of soy or sugar in takeaway food and people hear bad things about msg and ask me it's that. Much if the early reach was conducted to actually smear the Chinese community in the USA. Hope the article I sent helps, there are many other websites but BBC came up first

    Hi, is there such a thing as pre-cooking vegetables for Chinese takeaway cooking, or is that not "a thing" and everything for veggie dishes is cooked fresh each time? In BIR Indian cooking, the chefs will precook potatoes, carrots, and other mixed veg in spices during the day then have them ready to throw into a curry sauce as they cook it, so all they need to do with the veg is warm them up.

    • @ZiangsFoodWorkshop
      @ZiangsFoodWorkshop  6 ปีที่แล้ว +1

      MrCurry yes everything is cooked fresh everytime. The high power wok burners in takeaways cook veg is a fraction of the time. Also pre cooking the veg kills alot of there flavour, espically peppers they get a werid taste. Hope this helps

    • @PVflying
      @PVflying 6 ปีที่แล้ว

      Ziang's Oriential Food Workshop thanks a lot for your answer! Would you mind adding to your ever growing list a video on the use of "base sauce"? I understand this is a premade sauce made with oyster sauce, light soy, dark soy, sugar, salt, MSG, five spice, onion, ginger and garlic to some stock, but I'm not sure how it's used. Cheers!

      @@ZiangsFoodWorkshop Thanks, this is the only problem i find with Chinese food. At this moment I have jars of plumb sauce, hoisin sauce, oyster sauce and now a jar of Jimmys open.
      I cook only for myself so these jars could last me six month which obviously no good. A lot is going to waste.
      I may try freezing in ice cube portions.
      So far my favourite dish i made has been the beef chow mein with gravy. One thing I've learned is to go easy on the salt in comparison to some other forms of cuisine.

    Hi Chin! Did you ever try Lee Kum Kee satay sauce? Do you know if I could use it instead of Jimmys? Where I am, Jimmys seems just about impossible to obtain at a sensible price. Or the other option I have is Pantai brand Satay sauce. I’ve never heard of them, maybe you have?

      Jimmy is superior and is super expensive from the whole saler, its abit like refusing to pay the price for gold and selttling for iorn instead lol

      Ziang's Food Workshop Not quite that scenario actually. I’m happy to pay £5-10 for a jar of Jimmys. I get that it’s a superior product. Where I am in Sweden, to get it shipped here it’s more like £25 per jar, which I am not in a position to do financially sadly. I was hoping you might have experience of LKK, but don’t worry about it.
