EECH, Armenian Bulgur Salad
1/2 cup oil
2 cups of diced white onion
Jalapeño peppers to your taste
1 table spoon pepper paste
3/4 cup crushed tomato
1 tablespoon pomegranate paste
Sumac, salt and pepper to taste
1 cup water
1/2 cup lemon juice
1 1/2 cup bulgur (#1)
1 cup chopped parsley
Sauté the onions in the oil add the jalapeño peppers and continue sautéing
Add all the ingredients, besides the bulgur and parsley and mix all together in a separate bowl
Bring it to a boil
Turn off the heat and add the bulgur
let it cool down for about an hour
After it is completely cool add chopped parsley
Serve it with lettuce or grape leaves
Bulgur is a whole grain made from cracked wheat. It's packed with vitamins, minerals and fiber. Fiber-rich foods like bulgur may reduce risk of chronic disease, promote weight loss and improve digestion and gut health. It's easy to cook and can be added to many dishes, including salads, stews and breads
Not only it is tasty and simple to make, it is a superfood. Bulgur has nutty flavor. In just 1 cup it has 8 grams of fiber and 6 grams of protein.

When you put the Bulgur in, was it dry or does it need to be soften in water prior to cooking?
Hi! Thanks for your question. I use #1 bulgur. #3 will be too big. We use #3 for pilav. I do not soak the bulgur. I use dry bulgur. I hope this answers your question. Let me know how it turns out. Enjoy!

Do you use crushed canned tomatoes or do you use fresh tomatoes and grate it?
Hi Cristina! Thanks for asking. If you have fresh tomato it is preferable to use fresh, but if you do not have fresh use canned. I use either or. ❤️😘👩🍳
Is “red pepper” Aleppo pepper, cayenne, or paprika? My market doesn’t have “red pepper”
