KAJU KATLI
Preparation time 10-15 minutes
Cooking time 15-20 minutes
Serving 2-4
Ingredients
2 cups chilled Cashew nut, powder, काजू
For Sugar Syrup
1/2 cup Water, पानी (3/4 cup max )
¾ cup Sugar, चीनी
½ tsp Cardamom powder, इलायची पाउडर
2 cups prepared cashew powder, काजू
1 tsp Rose water, गुलाब जल
1 tsp Ghee, घी
Few Saffron strands, केसर
For Garnish
Silver vark, चांदी का वर्ख
fresh Rose petals, गुलाब की पंखुड़ियां
Process
In a small mixer jar, add cashews, grind to smooth powder. keep aside.
Now, sieve the ground cashew powder.
For Sugar Syrup
Now in a deep non stick pan, add water, sugar, cardamom powder.
Keep the flame on low and keep on stirring to form syrup.
Stir the sugar syrup till it forms string consistency.
Now, add the sieve cashew powder into the sugar syrup.
Mix it well, add rose water and mix till it starts releasing from the pan.
Once the cashew paste turns to dough, leave the pan and add ghee.
Continue to mix till the ghee melts completely and cashew dough is formed leaving the pan.
Switch off the flame. and grease the butter paper with ghee.
Transfer the cashew dough onto the butter paper.
Grease your hand with little ghee and knead for 30 seconds.
Once you get smooth dough, cover with butter paper.
Take a tray and press to form a uniform layer. Spread some saffron strands.
Then roll the dough with a rolling-pin, adjusting the thickness according to your choice.
Now, cut the dough into diamond shape or the shape you wish for.
Garnish it with silver vark and rose petals.

*A small tip for those who are struggling to make fine cashew powder like me and then the mess to seive it. Just grind your cashews with the sugar this will easily make the fine powder then you can put milk/water in pan and cook it. Also take heavy pan because it burns real quick in thin pan and stir constantly till it become thick but not too thick because it will get too dry after cooling.*

HI chef Ranveer. I would like to commend you on this perfect kaju katli recipe. It's definitely the best and most accurate recipe on TH-cam. I followed it step by step this afternoon and ultimately perfected it. Prior to this I had followed several recipes and had achieved no success. The part where you explain how to make the chasni is the step I kept getting wrong in previous attempts but because you have explained it so well, I finally got it right. Thank you very much!

I tried to made kaju katli today 3 hrs before this recipe was released using someone else's recipe.
I started of making kaju katlis but ended up making kaju laddus as they became really hard.
I regret it but am glad that we have a chef like Ranveer brar sir.

Thank you Chef Ranveer. Absolutely Fabulous Recipe. This made me the best Kaju Katli ever. Perfect texture, perfect chewiness, perfect sweetness and also perfect flavour. The colour is darker than commercial varieties but I guess those use chemicals. Tried Badam Katli as well but that has turned a bit softer. If possible do a separate video for Badam Katli. Happy Diwali and Happy Gujrati New Year.
