Since becoming vegetarian, I have sooooooo missed eggs for breakfast. I am extremely excited to try this. Tired of oatmeal, dont like tofu or smoothie bowls. Breakfast is my favorite meal...it's been a struggle. Love your channel. Thank you!

Agree! I don't miss anything except eggs. I'm excited to have found this recipe and plan to try it this weekend. I don't love tofu either. I've done tofu scrambles and they're ok, but not great. I have started to make potato and broccoli scramble and then I'll add in some white beans at the end. It's excellent, but I'm definitely going to try this!

@@janetcapetty1452 Have you ever frozen tofu, then thawed in the fridge for a couple of days and then used it for scrambles and/or anything else? We always freeze our tofu...it makes the texture different and we really enjoy it.

Good job! It is a traditional north Indian recipe without the amino acids and apple cider vinegar and is called “Besan ka pudda”. The other option is to mix the veggies in the batter itself ;-)

Just made this for our Sunday Brunch! It's delicious-- so tasty, healthy and filling! The batter comes out great, too! I didn't have chives to put on top but used some freeze dried basil. Thank you for this. Better than non-vegan omelette!
To get the sulphur taste from eggs, omit the soy and instead use a pinch of black salt called Kala Namak which is actually pink in colour from an Indian grocer.
I completely forgot I had this spice. Thanks for mentioning. It really does make things taste like eggs so definitely will use this my next time I try this recipe - that should resolve my concern that it didn’t taste anything like an omelet.
Chickpea pancakes make great light evening meals too. I assume that you can use a large non-stick frying pan in place of the griddle - as we don't have a griddle.

Tip: These chickpea flour omelettes are delicious but only taste good cooked. Folks, don't even think of licking your fingers if you accidentally get some uncooked batter on them - - TRUST ME !!!

Yes, they are pea shoots. I don’t have a video on growing sprouts on a tray but I learned all of what I know about sprouts from Doug Evan’s book : the Sprout Book. You can get it on Amazon
Do you make the chickpea flour by grinding uncooked dried chickpeas? Or do you take cooked (or canned) chickpeas and let them dry out and then grind them? Chickpea powder isn't available in the market in my area.
Yes, I just grind dry, uncooked chickpeas. It is soooo much better than using store bought, already ground. Our stores don’t have any preground chickpea flour left either.
I am beginning the WFPB way of eating for health purposes but also to lose weight. I’m a little scared of the recipes that use things like cashews etc because of calorie density. Can you still lose weight using recipes that include nuts since you seem to only need a small amount?
Teresa Bielak every vegan needs this. You can get it at a health food store, online or even my local supermarket has it. It gives a cheesy flavor. It’s not an active yeast and has B vitamins, I personally like to buy unfortified so I get mine online.
Yes it would be pretty dense and it wouldn’t taste quite like omelette, more like savory pancake but that isn’t a bad thing 😊 Experimenting is always fun 👍
I’m loving the 28 day course and ur show, but I was a little disappointed with this particular recipe. It was very bland, didn’t taste anything like an omelet and the sauce was way too watery. Now I’m used to adding salt sparingly so it’s not like I need salt and I don’t need it to taste like an omelet, but it definitely needs more zing! I know part of my issue is I’m still not a fan of Nooch & think it makes the foods taste weird. I’m going to try again, but will increase the onion content and other spices. With the sauce I will add more cashews and cut back on the water plus add more of the spices. But again, overall I’m loving ur show especially ur tips like being patient before flipping so never had an issue with that!

Fat is extremely healthy. It keeps you full longer and it enters the cells and keeps your glycemia balanced for the day. Also, it feeds the brain. Brain is water and fat. I do not understand why vegan community is so afraid of oil. Coconut oil and olive oil are the healthiest oils. Of course, I am against canoila, corn, safflower, soy oils.

I know what you’re saying. I try to avoid oil because it’s not a whole food but I occasionally use coconut or avocado oil if I really feel the need for an oil to cook with. Being scared of any oil can lead to orthorexia. I know because I’ve been down that path and it’s not mentally healthy.
@@Arrasel the oils may be expeller pressed, but they still don't have the fiber or other components to help your body break down the oils properly. Many auto immune disorders, that are caused by inflammation, are greatly improved if you ditch the oils. Oils, whether expeller pressed or processed through extraction, are known to be inflammatory. I have experienced this first hand.

You could also add a little bit of indian black pepper (kala namak) into the butter to give an eggy flavor

The sulphur taste seems to lessen upon cooking. So I like to sprinkle the salt on after cooking. Just a pinch is needed.

Questions were do you get your nutrition yeast and peanut butter with no oil from?
I buy Anthony’s non-fortified nutritional yeast from Amazon and 365 brand peanut butter from Whole Foods. It is just ground peanuts and a little salt.
Any idea what to substitute chickpea flour with that produce same results? I developed an allergy to it. Please and thank you 😊
