To be honest, the mario galaxy 2 one feels like you're entering in a restricted military zone, mario galaxy feels like entering an spacial military base and Mario 64 is straight up epic. But all three of them are great nonetheless.
I'd say the original feels like pure fantasy, while most people would associate the ones from galaxy 1 and 2 with things from the real world like military and space as you've noticed. The music totally fits the atmosphere of all three bowser levels, in which sm64's typical deserted and unreal vibes are especially noticeable
