Chicken Fajita Quesadillas

- Ingredients
3 Chicken Breasts
2 Tbsp. Taco Seasoning
2 Tbsp. Vegetable Oil
1 Onion, sliced
4 Cloves Garlic, sliced
3 Bell Peppers, sliced
1 Lime, juice
8 Tortillas
2 Tbsp. Butter
2 Cups Mexican Cheese Blend
1. Slice the chicken breasts into strips, about an inch apart, and coat with taco seasoning. In a large skillet, heat 1 Tbsp. vegetable oil and cook chicken until no longer pink and slightly charred. Remove cooked chicken from the skillet.
2. Heat another Tbsp. oil, add onion and garlic and cook for a couple minutes until it’s slightly translucent. Add the peppers, and cook slightly, then mix in the cooked chicken. Remove from heat and set aside.
3. In a clean pan, melt a bit of butter. Add a tortilla and move it around until it’s buttery. Add cheese, then fajita mixture, then more cheese, then top with another tortilla and pat it down.
4. Flip the quesadilla over and cook the other side until it’s golden. Remove from pan and cut into quarters. Repeat these steps with the remaining tortillas.

I did this yesterday and let's say it was a success. I would recommend chopping the onion in a little square like i did it's easier to eat then having a big piece of ognion in your mouth. I should've chopped the pepper smaller too, but the cooking preference is up to you. Let them simp a little much if you like them real soft. Otherwise this recipe is pretty good and easy to do!
You can always use your own seasoning like i did if you're not really a taco seasoning fab, pretty versatille recipe

A tip if it's a real pain, use one wrap. Load up one side(half of one wrap), top with cheese and fold the "dry" half over top. Don't over fill or it will always be a pain to flip. Cut it in half, and then cut each section in half again to get 4 pieces. Sure you have to cook two,so more time, but if it's easier, you might be saving time in the long run. (and your sanity)

I made these, but just folded one large tortilla over itself and cooked it for an extra minute on both sides. Was way easier than flipping two tortilla shells stacked on top of each other.
Replace chicken breast with chicken thigh, replace mexican cheese with cheddar, and use Fajita spice mix from an EL PASO box. Sprinkle some tabasco sauce in the finished product.

Prefer shredding the chicken, steam wilt the onions, and cut them into 1/2 inch pieces. NO seasoning other than salt, and pepper.
