Any possible substitute for niboshi? Not really specifically for this Ramen but since you often use it to add umami in other styles of Ramen. I can source almost all ingredients that you usually use in all these videos but I just can't find a niboshi source anywhere here. We do have several kinds of dried fish like dried anchovies(which I believe is different from niboshi) can I use these instead and still have a closer flavor profile to niboshi?

3:05 remember, this sort of thing is the reason why we have dogs. Not only will they eat any food you spill but they'll also eat any leftovers, like dried sardines you just boiled in lard or used for stock.
The flavor really comes from the larger niboshi. The small niboshi will only bring the umami. Maybe do a chicken soup and blend it with a niboshi dashi.
Silly question how is ramen soup made in Japan. I mean I have a gas powered stove an even on the smallest burner with lowest heat. There is no way I can get the heat to remain below boiling. 90 Deg in this case.
You will definitely get a cleaner flavor if you do that and niboshi can get bitter. Some people like the hint of bitterness though. It's up to the chef.
Can you do a video on Dashi myths? Some say start in cold water overnight, take out the kombu half way and Dashi needs to cool off something. Personally I've tasted no difference just boiling everything together
Niboshi can start to give off bitter flavors if extracted for too long or at too high of a heat. All Japanese dashi elements are pretty finicky but niboshi is the most finicky in my experience.

Yeah I've tried multiple methods as well, my palate is not good enough to tell the difference either haha.
