It feels like you have a cheat installed for block everything except the obvious un-blockables. But it is clear from the Kane's SmackDown you took that you don't have any cheats, it's just that your blocking is incredible.

Here's an idea: Play as a character with the lowest Endurance vs The Undertaker [Legend] (93 OVR), Brock Lesnar (91 OVR) and Goldberg (90 OVR) in a 3 on 1 handicapped match.
I don't remember if you can do female wrestlers vs male wrestlers but if you could, pick the female with the lowest Endurance
