as a diagnosed coeliac, what you said about being out of commission for 3-4 days screams coeliac to me - you should definitely get tested if you’re able! it’s hereditary, which makes sense if your family also have it. you can get checkups catered for coeliacs to make sure there’s no issues or deficiencies that fly under the radar. also, if you did end up being coeliac, unless you’re really, really unlucky, you would be okay with grain spirits and GF beer :D

My mother was diagnosed Celiac Sprue back in the 80's. Those were dark times. There was so much food she couldn't eat and when there was cross contamination, she'd be really sick. I'm sad that she passed and never got to see gluten free Oreos or how much the world has changed in the last few years to help those with Celiac live a more comfortable life. But all of them are processed without any chemical contents. Our ancestors drink them for a healthy consumption, mostly before goes to work as a farmer.
Heavy grain drinks make me feel heavy and tend to make me feel sick quicker. I have a lower tolerance for them. Tequila, vodka and gin are my fave but I didnt even know gin was a type of grain liquor, though until now lol.

you are correct, the gluten is distilled out. chances are the jack daniels is a cleaner product than the rums your are drinking. rums are allowed to have fillers, flavors and additive, however jack daniels and bourbons cant have any flavor or additives unless listed on the front label.

You could try a gradual approach. Try having a sip once a week. Literally a sip. Then of okay. If anything at all, back off. If completely fine, have two sips, repeat. Maybe you will find there is a minimum acceptable amount that you can enjoy.

this is acutally very realted to me, I also thought I had silicaiac disease I got a breath test tested negative then got a colonoscopy and found a bacteria infection. Whatever you think is better for our heath is better brother trust me being sick sucks. I was 16 at this time, being scared is completely understandable. Just wanted to say If you make an appointment with a local gasologist you can get a breath sample done, you just drink an acidtone drink then breath into a tube then they test that for silicaiac diesese and other insensitive things you might be allergic too. However, there is a distinct difference between those who are celiac and those with a gluten allergy. i have severe anaphylaxis to gluten and, fortunately, i feel somewhat confident in bourbon territory. that is not the case for other people, including Jacob. There isn’t an exact study on the comparative gluten sensitivities between people with celiac and people with severe gluten allergies but the caution still stands.

Gin is based on a (generally) gluten-containing grain spirit with Juniper added to it. Thankfully though, there are a couple corn and potato gins which I'm looking forward to finding in the future
