    I love meringues, Those are absolutely pretty! We have, in U.S. , pasteurized egg whites in containers in the groceries stores , but it's good to know how to diy. Thank you so much for the recipe... Much love!

      Hi hun, I used a pinch of salt (Thank you for reminding me, not sure i put that in the recipe! Will have to check). But the salt basically does the same thing, it just stabilises the egg whites, cream of tartar will do the same :)

      Hi hun, thank you for your comment! I used 4 eggs in total, but my eggs were extra large. As long as you just add double the weight of the egg white in icing sugar, you will be sweet :) that's the basic recipe for these meringues.

      thanks lovely! These can be made up to 1.5 weeks in advance and stored at room temperature in an airtight container.

    Rosie i made meringues but i see that they melt fast once i put out of the oven. Maybe i put to much color or i make something wrong. I have a good recipe but i dont know whats doing wrong. And i love to do it.

      Hi lovely, I recommend using paper ones if you can :) since we are only drying these out under warm conditions, in theory, the plastic ones shouldn't melt, but just to be on the safe side, best to use the hard paper sticks ;) x

    I made this recipe and I am sorry to say it did not work for me. I could barely whip pasteurize egg whites at all (with a kitchen aid on high) and when I finally did it was a very weak meringue. I lost all definition after piping. I don’t know if pasteurized egg white are different in America but I doubt it. I should have known better and did an Italian meringue. I don’t mean to be harsh I am sure this worked for you. I just putting this out there if others have had the same problem. I followed the recipe and had clean equipment.

      Some ovens have "warm" settings that allow it to go even lower mine I can control 100 to 150 on warm
