I made this myself so here’s the written out recipe: 3 cups whole milk 1 1/2 tsp vanilla extract 6 egg yolks 1 cup sugar 1 tsp cinnamon Heaping 1/4 tsp ground cloves 1 tbsp plus 2 tsp ginger powder 1 1/2 tsp ground nutmeg 1.5 cups heavy cream 1. Add 3 cups milk to medium saucepan over medium heat, let it steam but not simmer 2. In separate bowl, beat 6 egg yolks until they are slightly lighter in color. Add 1 cup sugar a couple of tablespoons at a time while continuing to whip the yolks until thick and creamy 3. Add small amounts of hot milk to yolk mixture while whisking, once the mixture is warm you can add it to the pot 4. Add 1 1/2 tsp vanilla extract. Continue to cook at a low heat until it is thickened 5. Pour through a strainer into a bowl and whisk in 1 tsp cinnamon, heaping 1/4 tsp ground cloves, 1 tbsp plus 2 tsp ginger powder, and 1 1/2 tsp ground nutmeg as well as the 1 1/2 cups heavy cream 6. Put bowl into an ice water bath and mix occasionally until it becomes cold, 5-10 minutes 7. Serve

Cool, I never knew what eggnog was. I make something called an egg flip that my kids love. Warm milk in a pan till steaming, about 3/4 cup per person. Put 1 egg per person in a blender with as much sugar as you need. I only use about half a tsp per serve but most people might like more. I add cinnamon, nutmeg, ginger, and vanilla but I just eyeball it. Whizz it very lightly just to break up the eggs then slowly trickle in the hot milk while on medium speed pouring faster as you go. Turn off the blender as soon as you can so it doesn't get too frothy. Pour into mugs and drink warm. Awesome bedtime drink for kids.
I had to take apart my stand mixer to make repairs. But I did successfully duct tape my whisk to my drill to make this recipe! Super EZ , SUPER DELICIOUS ! THANKS JOSHUA !

A little bit too much nutmeg but I can work on that next time, but as far as the mouth feel, the consistency everything, it is the same as store-bought!!! I'm actually quite astonished how easy it was! A tip to get your egg whites out of there: crack the egg and open a small hole. Then you just gently tip it and the egg whites will come out leaving the yolk in the shell! It's very easy, try it, you'll be amazed! Great job on this, now I don't have to wait 12 more months! Love it!!❤️💯

I tried this recipe (without the alcohol) and it was AMAZING! It tasted much better than store-bought eggnog, IMO. The spices do settle in the bottle, so make sure to it shake gently before pouring/serving!
After watching several videos about eggnog recipes this is my favorite presentation. It's the only one I saw so far that actually mentions why you perform each step. For example he says "thickening", "prevent curdling".
I'm not sure why you think it's funny, but he said that because it's well known that nutmeg is dangerous to use in large amounts. Even one whole nut can be dangerous to some people.

This eggnog is amazing! My husband and I made a batch for our family christmas. It is heavily spiced, though. We ended up making a second batch without spices and adding it to the first just to calm it down. But once it was all mixed together, it was amazing. Best eggnog ever.

I made this. It is on another level. This feels like liquid Christmas. If you make it without alcohol(like me) it will taste great. If you add alcohol be careful you may drink a lot of it.
Pastry chef here, after many thousand litres of anglaise i've discovered that by adding all the sugar to the milk before heating does not result in a different end product. Maybe give that a shot my dude and keep the b roll coming!
eggnog is essentially just custard with booze. I just think adding sugar to milk beforehand makes it easier to burn, as milk already burns easily on its own.
Adding a solute will cause the boiling point of milk to rise. Think of milk as water with solute (proteins and lactose) already mixed together. You’d have to evaporate water before you start burning the milk. That means you’d have to boil the milk. The main goal is to avoid getting the milk boiling, since that affects the curdling of the yolk. The main takeaway is that you’re supposed to be keeping the milk well below the boiling/burning point, if you want a happy eggnog. By the way, adding sugar to the milk first would raise the boiling point and thus bring the burning point closer to the boiling point. In the end, it doesn’t really matter as you long as stay below. Cooking is just really messy imprecise chemistry. Also on another note, any time you see steam, technically the milk is boiling but not intensely like a rumbling boil. So just avoid that.
Thank you for this recipe I didn'nt have whole milk just powdered milk so I improvised and put a little butter, monk fruit and cream cheese and whipped the egg whites. It came out so creamy. My husband loved it! Egg nog is so expensive and they put unhealthy ingredients in it.
Never had eggnog nor do they sell it in my country, so I tried this recipe and it tasted just like melted vanilla ice cream (but in a good way) 😄 it was a tad too sweet, but I'll make it again with lesser sugar and spices👍🏻
Personally I like to add the spices in during the first step I find that heat and the added time really let's the spices get in there. I also like to add a tiny bit of nutmeg and/or cinnamon to my glass when I pour it. I never add the alcohol directly to the eggnog when making it in bulk it started because I medically couldn't drink for a good amount of time (the first year I made eggnog drinking alcohol could have landed me in the hospital) and now I don't add it simply on the logic of not everyone wants boozy eggnog and if you do you can add as much alcohol to your cup when you pour it as you want making it as strong as you'd like to your taste, same theory as when you make iced tea and you serve it with a container of simple syrup on the side you don't sweeten the tea when you make it you just let people sweeten their serving to their liking

Just made this. I did a double batch and it came out to 10 cups. I did use the rum. It's very tasty. 10/10, would recommend. For anyone that's concerned about the alcohol, it's basically a trace amount just for flavoring, about 0.00875%.
Im from iceland and we dont do eggnog here. But i have always wanted to try it and when i saw this video 3 years ago i just tried it and now it is a tradition to make a batch on the 1st of december and then a double batch 3 days before christmas. Thank you josh
I never liked eggnog from the store. I decided to make my husband homemade eggnog one year with this recipe and now I’m hooked on eggnog. Tastes so much different and better then store bought. I come back to this recipe each year now.
Pro tip if you heat your milk-egg mixture too much and it scrambles: throw it into your vitamix and mix it for a while, it re-emulsifies everything back together (at least it worked for me).

I'm a fan of this guy and his page, just tried making this egg nog. I dont reccomend 1 cup sugar. I'd use 1/2 cup or less. Its way too sweet. Also it's very strong with all the spices. You could probably use less spice too
Yeah I just made a batch and feel the exact same. Way too much sugar. I used half a cup. The spices were a bit too strong. But that's okay I'd just modify it to my own taste and it would be perfect
I agree that the spices were wayyy too much, but it’s a great technique to learn and like you said, we can adjust the spices to taste! I also didn’t add rum or anything on my first go and it still was great

Just made this, really tasty! Used sailor jerrys spiced rum. Made it a little stronger than the recipe, and added a dash in my glass as well. Great flavor and really smooth without being to strong. I'm making 2 more batches to bring as a dessert drink for a couple of Christmas dinners with friends and family. Thanks Josh!!

My own little culinary invention is to use eggnog to make ice cubes. They make the best ice cubes for any alcoholic beverage that goes with eggnog. Fill up a cocktail glass with your nog cubes and pour over your favorite beverage. When I have the urge to indulge, my favorites are coffee liqueur or spiced rum also goes so well over nog cubes.
This tastes great. I had to eyeball the spices cus my baby was crying while I was making this. It tastes great. It's in the freezer chilling now. Thanks. I never made Eggnog before. And it came out perfect.

I’d second that, just made it two days ago and find like with a lot of custards, it gets better as it ages. But I think overall it came out a bit too spiced. I’d go less ginger as well, maybe put like 3/4 of the spice mix in too, then adjust to you’re liking. The thickness and texture was perfect though!

Just made it! I didn't put any spices, cuz I have spiced rum. I just added a little bit of nutmeg on the top of the cocktail. Also insted of 60ml of rum, I added 200 :D It turned out amazing! Thank you so much for this recipe!
Great tip for what to do with the egg whites! We are making loads of eggnog this Xmas and have a lot of egg whites just sitting in the fridge haha. Also, we drink our eggnog hot (well, 70 degrees hot to be precise haha). Never had it cold. It's so nice warm with brandy!

OOOOOOOOOOF THIS IS SO GOOD. oooooooooooo this is SO DELICIOUS. I had to lower the sugar quantity though (150g), but that's just my preference in all custard/cream/milk based desserts, and let me tell you - my korean parents-in-law who are not familiar with this kind of taste in the slightest were just blown away by this drink. it's so soft and so comforting♡

Love this! For me I found that the mixture was already thick enough with just the milk so I added whole milk instead of heavy cream at the end. And I realised it was too sweet and still too thick for my preference so I thinned it out with another cup or so of skim milk. Turned out perfect. Little bit of orange zest with the grated nutmeg when serving makes it great!

Yeah, I'd highly recommend halving the ginger. The cinnamon and Nutmeg were great as-is, but that ginger is a bit much.

I made this, and it came out delicious. I used half the sugar, and I didn’t have ginger at the moment, and it still turned out delicious.

I made this. It is on another level. This feels like liquid Christmas. If you make it without alcohol(like me) it will taste great. If you add alcohol be careful you may drink a lot of it.
Pastry chef here, after many thousand litres of anglaise i've discovered that by adding all the sugar to the milk before heating does not result in a different end product. Maybe give that a shot my dude and keep the b roll coming!

eggnog is essentially just custard with booze.
I just think adding sugar to milk beforehand makes it easier to burn, as milk already burns easily on its own.

Adding a solute will cause the boiling point of milk to rise. Think of milk as water with solute (proteins and lactose) already mixed together.
You’d have to evaporate water before you start burning the milk. That means you’d have to boil the milk.
The main goal is to avoid getting the milk boiling, since that affects the curdling of the yolk.
The main takeaway is that you’re supposed to be keeping the milk well below the boiling/burning point, if you want a happy eggnog.
By the way, adding sugar to the milk first would raise the boiling point and thus bring the burning point closer to the boiling point.
In the end, it doesn’t really matter as you long as stay below.
Cooking is just really messy imprecise chemistry.
Also on another note, any time you see steam, technically the milk is boiling but not intensely like a rumbling boil. So just avoid that.

Thank you for this recipe I didn'nt have whole milk just powdered milk so I improvised and put a little butter,
monk fruit and cream cheese and whipped the egg whites. It came out so creamy. My husband loved it! Egg nog is so expensive and they put unhealthy ingredients in it.

Never had eggnog nor do they sell it in my country, so I tried this recipe and it tasted just like melted vanilla ice cream (but in a good way) 😄 it was a tad too sweet, but I'll make it again with lesser sugar and spices👍🏻

Personally I like to add the spices in during the first step I find that heat and the added time really let's the spices get in there. I also like to add a tiny bit of nutmeg and/or cinnamon to my glass when I pour it. I never add the alcohol directly to the eggnog when making it in bulk it started because I medically couldn't drink for a good amount of time (the first year I made eggnog drinking alcohol could have landed me in the hospital) and now I don't add it simply on the logic of not everyone wants boozy eggnog and if you do you can add as much alcohol to your cup when you pour it as you want making it as strong as you'd like to your taste, same theory as when you make iced tea and you serve it with a container of simple syrup on the side you don't sweeten the tea when you make it you just let people sweeten their serving to their liking

Just made this. I did a double batch and it came out to 10 cups. I did use the rum. It's very tasty. 10/10, would recommend. For anyone that's concerned about the alcohol, it's basically a trace amount just for flavoring, about 0.00875%.

I never liked eggnog from the store. I decided to make my husband homemade eggnog one year with this recipe and now I’m hooked on eggnog. Tastes so much different and better then store bought. I come back to this recipe each year now.
Pro tip if you heat your milk-egg mixture too much and it scrambles: throw it into your vitamix and mix it for a while, it re-emulsifies everything back together (at least it worked for me).

I'm a fan of this guy and his page, just tried making this egg nog. I dont reccomend 1 cup sugar. I'd use 1/2 cup or less. Its way too sweet. Also it's very strong with all the spices. You could probably use less spice too
Yeah I just made a batch and feel the exact same. Way too much sugar. I used half a cup. The spices were a bit too strong. But that's okay I'd just modify it to my own taste and it would be perfect
I agree that the spices were wayyy too much, but it’s a great technique to learn and like you said, we can adjust the spices to taste! I also didn’t add rum or anything on my first go and it still was great

Just made this, really tasty! Used sailor jerrys spiced rum. Made it a little stronger than the recipe, and added a dash in my glass as well. Great flavor and really smooth without being to strong.
I'm making 2 more batches to bring as a dessert drink for a couple of Christmas dinners with friends and family.

My own little culinary invention is to use eggnog to make ice cubes. They make the best ice cubes for any alcoholic beverage that goes with eggnog. Fill up a cocktail glass with your nog cubes and pour over your favorite beverage. When I have the urge to indulge, my favorites are coffee liqueur or spiced rum also goes so well over nog cubes.

I’d second that, just made it two days ago and find like with a lot of custards, it gets better as it ages. But I think overall it came out a bit too spiced. I’d go less ginger as well, maybe put like 3/4 of the spice mix in too, then adjust to you’re liking. The thickness and texture was perfect though!

Great tip for what to do with the egg whites! We are making loads of eggnog this Xmas and have a lot of egg whites just sitting in the fridge haha. Also, we drink our eggnog hot (well, 70 degrees hot to be precise haha). Never had it cold. It's so nice warm with brandy!
Use egg whites in baking or throw it in to your French toast mix for some added protein. So many different ways to use egg egg whites.

I had to lower the sugar quantity though (150g), but that's just my preference in all custard/cream/milk based desserts, and let me tell you - my korean parents-in-law who are not familiar with this kind of taste in the slightest were just blown away by this drink. it's so soft and so comforting♡

Love this! For me I found that the mixture was already thick enough with just the milk so I added whole milk instead of heavy cream at the end. And I realised it was too sweet and still too thick for my preference so I thinned it out with another cup or so of skim milk. Turned out perfect. Little bit of orange zest with the grated nutmeg when serving makes it great!
