Question: does the esp device need to be tapped into the reader’s power supply? (the positive and negative wires) or can it have it’s own standalone power supply like a lithium battery?
It should, because it captures the binary itself. The frequency would only matter on the reader. The protocol however matters, this only work on Wiengand which uses 2 wires to transmit data

Yes it can have it's own power supply.
Do you need to be close by the ESP key to access the data on your phone? Or does it connect to the internet somehow and you can access it remotely?
you need it in wifi range, it has its own wifi spot for you to connect
could these read things like debit and credit cards?
I tried on mine and it can read it. Didn't really try to use it though..
