Necromancy doesn't bother me because they deal in death, it's more that they deal with dead bodies without their permission. Also that they deal with putrefaction! I've often wondered if d&d zombies really have the original soul trapped in them, because many descriptions seem to imply that they don't but I wonder if that's just a form of misinfo used as a retroactive justification.
From what I can tell in the lore animated dead in DnD generally don't have the souls inside still. It's a sort of soul-shaped echo made of negative energy. Their real soul has moved on to whatever plane it's going to. There are a few exceptions to this (in the video I mentioned a skeleton where the soul is trapped in a gem).

What is Zin-carla in your lore? I've never played DND, but I read Drizzt books. Zin-carla is risen from dead drow which is send to kill Drizzt, but it swordsman skills are limited by operators control forced on risen drow. It's great blessing of Lloth, and failing Zin-carla is very offensive to spider queen.
The elves have some unique necromancy stuff I need to look at in more detail, but generally speaking, if a god raises you fully sentient from the dead to be a champion, you're a death knight. This seems to be a catch-all term for a few unique phenomena that differ between patron gods. Maybe some others will have some more specific answers though. ^^
I would to see lore laying out how common necromancy is among magic wielders and how they effect the political economy of these fantasy realms. I could see a necromancer getting rich by enslaving the dead and working them until they fall apart.
Not sure if its still cannon (haven't played since 3.5) but Thay used undead for everything from farm labor to mining and construction. I doubt many regions would tolerate it openly but there's lots of room for a story there 👍

According to the Wiki, they are undead creatures that are created through a manifestation of evil deeds and desires they had in life, which is harnessed by an evil divine force to animate them. They drain the life force of living creatures and can make new wights this way. They hate sunlight and are usually found underground. They are distinguished from other similar undead like ghouls by how they are made and the fact that they don't consume the living physically, rather they drain life energy.
