An Electric Smoker is just like a kitchen oven but you can add wood chips for the smoke flavor. Why use a water pan ? When you wrap the ribs in foil that’s what makes them moist . Your thoughts......
I love them both in different ways. The materbuilt is more of a set it and forget it, perfect temp and consistent results which there is always a place for. The bronco needs a bit more attention, give a great smoke ring and a bit more flavor. It's really a toss up. Materbuilt is easy and good and Bronco is a bit more work but great! Hope this helps!

Basically the same as on a pellet grill...... 3 hrs at 225 uncovered, wrap for 2 hrs , then one hr unwrapped
That's for ribs not a pork butt
Never trim the fat
