Flautas are stuffed and rolled corn tortillas that are fried, usually deep fried. Those are "grilled" or toasted breakfast burritos. Yes, burritos. Tacos are in corn tortillas.

Good Cook. I think that would make an excellent brunch, but a bit much for me for breakfast. What would I do different? Leave off the cilantro, not for me. Eggs are how you like them but what you make I would call chopped fried eggs. Scrambled eggs have to be scribbled before you cook them, in fact that is what I call them "scribbled eggs", yes they are yellow and delicious especially if cooked in butter, more butter than you need to cook. All the chefs on this channel take too many short cuts from reheating pre made/marinated ingredients. The presentation is good but less shortcuts please...either that or get some real chefs.
I do believe flautas are fried… Kinda like those eggs you burned, bet those were dry. I think the idea (for a small breakfast burrito) was good but poorly executed. Smashing the tots was interesting; might try. Wife and I use the sauces already; I do red and she does the green.
