This looks good but I'm used to eating crabs with lots more crispy fried batter coated on them where you don't see any of the shell. How do I get a more uniform batter coating to stay on the crab and cover it completely with your recipe? I am going to try cooking this recipe.
Whisk a couple of eggs into some buttermilk. Dip moist cleaned crabs into AP flour, then into buttermilk, then into 1/2 flour and 1/2 fine cornmeal or polenta (same thing) that you have seasoned how you like it. I like some pepper and just a little J.O. #1 seasoning or Old Bay. Drop carefully into deep fryer, or saute pan and viola!
You are washing the seasoning off when you dip it in the mix, you should add it to the flour. It works a lot better

We grew up using the pancake mix for the skin !!!so yummy
I use a beer batter to fry my crabs. Wet batters are better
That's how we do soft shell crabs. Never heard of frying a hard shell crab.
