Banana Bread x 2 140g Self Raising Flour 140g Caster Sugar 140g Butter/Marg 3 small eggs or 2 large eggs 2 very ripe bananas (mashed) 50g Icing Sugar Method: Pop flour (sift it if you want), eggs, butter/marg and sugar (you can cream the sugar and butter/marg first - I prefer to chuck it in) Whisk or mix until smooth silky cake mix. Fold in the mashed banana thoroughly. Put into two 1lb tins for each drawer (cake tins greased and lined with baking parchment) Pop into each drawer (you can preheat if you wish too) turn on, press Match, press Bake on default setting 160c/320f for 30mins. Once time is up, check with a skewer to if cooked (clean no cake mix) leave to cool intins for a few mins. Take out of tins and cool on a rack. Pour icing mixture (I recommend 100g icing sugar with a few tsps of water for 2 cakes) Enjoy!!

Hi Kerry I make Banana Cake but I always take out the crispa tray when cooking cakes and I cook my Banana cake on 150 deg for 45 minutes and they are cooked perfectly . That is the Cosori Duel Blaze which cooks from the top and the bottom.

I made your lemon drizzle cake and my family love it so thank you and I made bread and butter pudding and it was fantastic hope you keep going love it ❤
I make banana cake at least once a month, a really easy recipe is 125g butter, 3/4 cup sugar, 1 tsp vanilla essence, 1 egg, 2 ripe mashed banana's, 1 1/2 cups self raising flour, 1/4 cup milk. Melt butter, sugar and vanilla in medium saucepan, remove from heat and add banana's stir till just combined. Add egg and mix well, stir in flour, add milk and fold lightly. bake at 170c for approx 40 mins (although not sure about air fryer time) If you like walnuts add some walnut pieces to the mix, and sprinkle on top before cooking. When I have banana's that go ripe I mash them and freeze them in bags till needed.
That's a great recipe, I love the addition of the walnuts plus freezing ripe mashed banana a great idea, I'm going to do that tomorrow, I had 4 ripe bananas but recipe said only 2 needed, I would never have thought to freeze them 👌👍👍 thank you for that Janet💕
A little late (It is now September 2023) I find that the #1 tray/basket heats up a little hotter than the 2nd tray/basket. Does that make sense, so timing is a bit off
I use ripe bananas mash them then add everything except the flour mix it all up the sift the flour in gradually then you will find the banana is blended in perfect but great for a first time one of our favourite that and lemon drizzle xx❤❤

I found mine dipped if I done it altogether, so I now cream the sugar and butter with vanilla essence, then fold the flour in slowly, then the banana last. I even googled why it dipped and it gave me 2 reasons, baking powder out of date and putting flour in to fast. So hot mine off to a fine art now 🤣🤣 bet the boys loved it. Well done on your first attempt.

Hey Kerry another great vlog thank you. I made that much banana loaf during lockdown that I think I sickened myself of it. Using the same recipe I added dried fruit instead of banana just to get a variation. lol. I call it banana loaf. Keep the vlogs coming.
Hi there in south africa this is a favorite you can also add some chocolate chips. Never use icing. The other staple is carrot cake. I put my ripe banana as is in the deep freeze. It's a tea bread or loaf cake.

Never made babana bread, but I sometimes make a similar with pineapple or apple, using a basic victoria sponge recipe with a dash or two of vanilla extract as Tracy said. Looks yummy 👍

It’s a lot darker than yours (I didn’t use your recipe admittedly but I have come to your page to see how yours looks, because I trust you and your judgement). Im still a tad weary I messed this up but you live and you learn. 23 and first time baking myself living away from home at 10:30pm on a Friday😂

It is oven temp but I did min eon air fryer which it why I want you to try them.Very simple and the best I cut into half because it’s just me. 2 cups selfrising flour 1 stick butter 16 oz sour cream Cut butter into flour till crumbly add sour cream. Sticky dough Place on floured surface and kneed a little till workable. Cut and place in air fryer at 400 degrees bake for 5 mins and turn and bake another 3 to 5 mins. As you know fryers are different so use your judgement. I used a parchment paper made for fryers but if you choose to use oven grease pan. Please let me know if you like them and hopefully you make a video. If you have any questions please give me a reply.Good luck K.

Try this method.
3 or 4 file bananas
75g melted butter
200 g (1 cup) sugar
1 beaten egg
1 tsp vanilla essence
1 tsp baking powder
Pinch salt
259g (1.5 cups) plain flour
In bowl mash bananas
Add set ingredients and mix
Add dry ingredients and mix (no need to beat)
Pour in fine
Optional extra - like blueberries in with a spoon
