That has to be done in coding , you got to put the formula in code
How to download simpletimer.h library.It is not there in my library.
Open Arduino ide software - click sketch -include library - manage libraries
Type simpletimer in library manager and when it appears click install

Can you swap out the flame sensor with a pir sensor
No, it’s a gas sensor you cannot replace it with PIR sensor. PIR sensor does not detect any gas
