Friends, today I am sharing the process of making both malai and cream of cow milk.
Malai is made by heating non-homogenized whole milk to about 80 °C (180 °F)till it gets boiled and then cooling it. Yellowish layer on the top is skimmed off. Sometimes this process is repeated 2 to 3 times to remove most of the fat. Malai has about 55% of fat. Buffalo milk is thought to produce better malai because of its high fat content. Today I have made malai from Cow's milk.

When we do not boil milk and let it be in fridge for 5-6 hours, a thicj layer gets formed on top surface. This thick layer is skimmed off, which may be considered as homemade cream.
Pure ghee can be made from malai while not from cream. I have tried to show making both processes in this video. I hope you would like this video for better understanding,

Very nicely demonstrated. I believe you must have used full fat milk. It would be economical to buy fresh cream container and use as you go along, because the container is labeled and saves space in fridge. Just a thought.
