Result is the best I've made yet (others also agree) and at a whopping 9.4 % voltage there's a few good nights ahead! Thanks for the recipe - and I'm off to make my next 40 pint batch now. Cheers.

We've just lashed an almost identical recipe into our bucket with some EC-1118 yeast. I didn't use yeast nutrient though, but some is being delivered tomorrow, so I'll put some in. Our recipe has a litre of very strong stirred tea in it.
Presumably the more sugar and yeast that you add, the stronger the cider, but there must be a limit? I like it around 6% - 7%. What's the maximum you should use before you ruin the whole batch?
There's a limit as to what cider yeast can handle. If I'm going to brew a festival cider I make it approx 8%. Any stronger than that you'd be as well making wine.
@@iraceruk Off the top of my head I think it was sweetening it until 1.060 was reached on the hydrometer. Use proper cider yeast too, it's what its made for.
@@HippieBeerReviews I only have a bag of sugar, a bag of bread maker's yeast and a few litres of apple juice. I don't have any instruments to measure alcohol levels. I've chucked a couple of litres into a large bottle along with a few teaspoons of sugar and pinch or two of yeast, so will just have to see what happens! Thanks for the replies 👍
@@iraceruk If you want it proper strong chuck about 1/2 a kg of brown sugar into a demijohn with 4.5 litres of apple juice, yeast and yeast nutrient (I sometimes use bread yeast but proper yeast is better tasting). Put an air lock on top of the demijohn (you can get all this stuff at Wilko) then leave for around 2 weeks for some seriously naughty cider
Howdy bud. My cider has been in a warm airing cupboard for several days now. I used cloudy pressed apple juice (not concentrate) and just added sugar and some bread making yeast. It bubbled for a few days, then stopped. It now just smells and tastes like fresh apple juice - even though it's been out of the fridge for days. Is there any way of telling if it's ready (or alcoholic) without any fancy instruments? Will it be safe to drink? Presumably anything that smells and tastes ok is safe to drink? Surely it would smell and taste like vinegar if it was off?
not to mess with the perfection this appears to be, and not that I'm into a Brothers style flavoured cider, but can you add flavours like strawberry or peach to it to add some variety?

Yes David. that is the "Lag" phase where the yeast is rehydrating and getting ready to ferment. usually takes around 12hrs to complete at the correct temperature.
You can only the prison drink with this method. If you want to make quality wine, you should use high quality fruits for wine making or wine kits. Thanks for this share.

Hey The Hoppy Hippie, I added 2 kilos of sugar to 20 litres of Tesco apple juice using Youngs dry cider yeast from my local brew shop with some yeast nutrient. It tastes lovely, like a strong version of Old Rosie. I love strong cloudy scrumpy but Jesus this stuff blows your socks off! After the first pint I was feeling warm and cosy, after the second pint, the rest of the night is a blank! haha. Thanks for teaching me how to do that man!

Mine was 68p per liter I just fill up my used Rosie jugs. I put Alison's yest in it can always add more sugar if its too sharp.

Haha good stuff. If it needs sweetened just add a tab or 2 of sweeteners to each bottle. Enjoy! Get brewing for xmas :)

If it's stopped bubbling then that's the yeast spent. Siphon it off the yeast bed as best you can and have a taste.
New to brewing, going to give this a go. How long will it last for once bottled? Going to use 1L plastic bottles...thanks

If you use wine yeast after fermentation bottle it then leave it for a year at least and it tastes way better. But it is too strong when I make it.

Yeast nutrients are great to keep they yeast more active and healthier.

You can make it without nutrient, it won't do any harm.

Eddy Smerdon should be ready to bottle in a week. The longer in a bottle the better really but will be drinkable in 3-4 weeks.

Yes, I'm sure it's what should be used anyway. Add enough for a starting gravity 1.040 for 5% abv or more if you want it stronger.

Figaro Apparently it gives the yeast more food & vigour. I've brewed without with good results too so if you don't have any I wouldn't worry.

Depends on what you're original gravity is. I make mine mostly 5% with a gravity of 1.040 but you can up that if you want it stronger.
