Kym, the outfit is called Ihram. In Islam, it's a sacred state that a Muslim must wear/enter in order to perform the major pilgrimage (Ḥajj) or the minor pilgrimage (Umrah).
Thank you for your answer kuchintamy. May I ask if there is a reason for why the outfit isn’t or maybe can’t be worn in-flight? I can only imagine it being out of consideration for other cultures like my own, as I believe there to sadly still be remaining prejudice towards the Ihram and similar outfits. If there are other rules in Islam, or maybe practical reasons for why the Ihram seems to be entered upon landing in Saudi Arabia. Or is it because they are “entering” the country, though might it be mid-air? I would love to know, thank you in advance.
Ihram can totally be worn in-flight :) some people choose to change into it before boarding or at home. The point is for pilgrims who are going to Makkah for Umrah or Hajj need to be in the state of Ihram before a certain distance outside of Makkah which is called the Miqat (boundary)

Some will change to it on the flight as a matter of choice, though there are also others that do so at home or airport before they depart on their journey. You can Google on this for additional explanation and info 👍.

I flew a lot between Saudi Arabia and Europe in the late 70's Also noticed when flying out of Saudi a lot of women as soon as we got in the air went straight to the toilet in their black clothes Then they came back to the seats in jeans o t shirt . Same thing when I flew back down but reverse procedure. Regarding alcohol Most flights were alcohol-free. If you wanted a drink on board, you had to buy a bottle duty free at the airport before you boarded. Then Saudi airline provided soft drinks and ice. Can only remember one time we flew from Damman to Frankfurt that alcohol was served out of Saudi
The Gulf air business class is a reasonable product however the economy is not good especially if you are severely disabled.The staff seem very pleasant.

Is it gulf air who have also reverse facing seats in Business class? I found it weird....... (or is this Qatar Airways), anyway the middle eastern airlines are the best (in my opinion). Nice summary !
