It's beef brisket and beef sinew that are braised in the VN beef stew (Bo Kho), sometimes there are tendon pieces too. One of my faves.

My father in law is also Dominican and I can totally identify with how fun it is to show him stuff like this. I took him to Korean one day and it blew his mind 🤣 also… if you haven’t tried pho xinh cherry hill .. it’s not far from where your at (I live in Bellmawr ) and it’s really good and not one of those super popular spots.
Also Futomaki is basically next door to that place and you gotta try the yellowtail collars. Freakin amazing.

Personally- I Always taste the broth first, before adding stuff. Hoisin and sriracha on the side for dipping the meat in (pause). Great pho broth shouldn’t need anything, although that’s rare.

The bowls of soup had a lot of flavor great ingredients, and the bowls would full up any person,the cuts of meat vegetables potatoes for the sizes or the bowl,Vietnamese is always hot when they bring the food in the table.

As a Vietnamese, I can confirm, your wife knew what she's talking when describing how to enjoy the beef stew.
Everything you guys ordered looks delicious! Did you squeeze lime in your FIL's pho and add basil to it? Those two things make a difference. Try bun ho Hue if you haven't yet along with com tam, banh xeo, banh cuon, bo kho, etc.
Around here you can only get that cut of beef w the tendon flap at the Asian market. Most places cut and toss that piece in the trash

I get beef stew with noodles at a Vietnamese place instead of beef noodle soup from a Chinese place cause they give you way more beef for less.

True, you can look into Taiwanese places for beef noodle soup if you want a lot of beef
Taiwanese beef noodle soup is too lean. Cantonese and Vietnamese beef stew is much better in my opinion. The beef cut is brisket with the connective tissues and fat. After you braise it nice and long it turns into pure flavor. The tendon is key as well.
@@edwardg8588 The classic Taiwanese beef noodle uses the cuts with tendon and some fat and takes hours to braise. It should be extremely tender.

That's not pho. It looks like beef stew without potatoes and noodles instead. Pho broth is clear and doesn't have those kinds of vegetables in it, plus the meat is totally different.
Look at the video. He explains in the beginning that it's not Pho. His father-in-law got Pho, JL got something different.

Yeah, see, that restaurant is confused. You can't eat Pho with Fork and spoon.
It's a dish that's made for chopsticks. That's why your Don Dominico is having trouble eating the bits of meat and the noodles and all that.
It's the restaurant that's trying to do too much. They gotta offer the clients Chopsticks for the full experience.
