I just made this and added a can of lite coconut milk and red curry paste instead of curry powder. Yumm!
Exactly what I would do. And I’d add chickpeas or red lentils, and a can of undrained tomatoes, coriander, BTB veggie paste, salt.
I love my IP and instead of buying more than 1, I purchased an extra internet pot.

Finally, you can depend on me to be up front in my videos. Most of the time, I'm trying out recipes for the first time with the camera rolling. I like to convert stovetop recipes to Instant Pot recipes. As for the family feedback, I decided not to be afraid to let people see how my family truly reacts to my cooking. Sometimes the whole family loves a meal, and sometimes the kids are not fans but hubby and I love it. Meals that are a complete fail don't make it to this channel. I don't want to waste anyone's time watching a failed recipe. This a place for inspiration. ;D
I received my IPot yesterday and today I made your red bean goulash. I made these changes, added black beans, used a pablano pepper instead of a green one, added a small can of mild green chilies, and used brown rice small shells for the pasta. My husband ate three bowls of it or maybe four. I lost count...lol. So...big hit my first try!! Thank you for your great videos. You are a hoot and I really enjoy watching you.

Just made this tonight from your cookbook. I agree with your son. It isn't spicy. But it is delicious. It is a milder taste than I was expecting. But, the more you eat it, the more you like it. It will become part of our regular rotation. Thanks for another great recipe.

I'm SO glad I found your channel. I'm trying to get healthy by moving towards a plant based diet. I ordered a Lux Instant Pot 6 in 1 then Amazon dropped the price on the Duo 7 in 1 so I ordered that. Was going to return my Lux but I think I'll keep it now to be able to keep rice and other food warm while cooking something else. Love your recipes!

This is delish! I made the following changes:
1. Omit the potatoes (because it's being served over rice);
2. Double the creamy curry sauce;
3. Add/saute lots of extra chopped veggies (cauliflower, broccoli, &/or mushrooms, etc.) with the chopped tomatoes & creamy curry sauce; and last but not least,
4. Stir in the baby spinach at the end while in Keep Warm mode just to barely wilt it.

I would try adding 1 tspn Cumin, 1/2 tspn corrianda, while in the saute mode, I would also add the curry at this time as it will bloom the spices, if you like raisins add 1/4 to 1/2 cup of those, I love rasins with curries!
That's a good tip about doubling the sauce. The original amount will cover twice the veg but it mellows out the flavour.
I finally made this for a 2nd time tonight, Jill, and it was SOOOOO good!!! (Or as you say, O M G Good!!) This time I followed the recipe except for the following: I added 1 chopped red bell pepper (with the onion) & more garlic, and several cups of young swiss chard, chopped, with the tomatoes & other greens, and a little crumbled tofu that I had on hand (but it could have used more). Instead of 1 chopped tomato, I used a 14.5 oz can of chopped tomatoes with their juice. (I also did not drain the liquid after cooking the root veggies.) It turned out plenty thick enough! In the end, I added 1.5 t. of red pepper flakes (for a kick) and an additional teaspoon of sea salt. I served it over cooked short grain brown rice, and it was delish! : )

So Jill, I’ve made this twice now since I got my Duo Crisp ipot and your hubby is correct… it is most definitely MOREISH! I don’t normally go for a Korma style curry, but this is DELISH. We usually forgo the rice and have a load of greens of some sort on the side. Lovely! Live from Hilly in the UK. X

I was so excited to try this! I just got the hang of copying coconut curry from my favorite Thai restaurant and this is a close second for a more convenient and time saving meal. I got a new curry powder and it was awful! No flavor or smell!? So I added a teaspoon or so of red curry paste. I also forgot to add salt so I did a couple splashes of soy sauce while it was simmering. My potatoes were too small so they mashed up a bit and made it extra creamy lol. Next time I'm just using straight curry paste and maybe coconut milk instead of water in the sauce. This made for an awesomely tasty dinner. :) Thanks, Jill!
hiya i made this yesterday, i had it for lunch and dinner. both times i forgot the spinach:9. other than that. it was amazing! for dinner i added frozen stir fry. beautiful. thank you for quick yummy meal. still have another for 2 or more people. me and my partner was in love my kids kept saying yuck, please get older and eat my meals

I made this last night in my 3qt and it turned out great! I cooked the veggies for 1 minute less and the potatoes and onions still completely disintegrated so I may try replacing with sweet potatoes or cauliflower next time. I wanted to add cabbage too but I ran out of room in my pot! I left out the ginger because I’m not a fan, and I need to experiment with some different spices next time because it ended up a little bland with that omission. Maybe some veggie broth, coconut milk, and sriracha to liven it up a bit. Thanks for the recipe!

I whipped up a vegan creamy tetrazzini the other night, not in the iPot, but baked up in a casserole. It was such a BIG HIT with my family I'm not even going to wait a whole week before I make it again. I regret not turning on the camera when I made it. You could be making it yourself right now. SO SO GOOD.

I so appreciate you! You make me smile and give great recipes and Instant Pot (Whoot! Whoot!) tips. I was thinking that maybe adding coconut milk to the creamy cashew sauce would give it extra flavor? Perhaps garnish with cilantro as well and a tiny amount of roasted cashews. Yay! Trying this tonight!
mudprof wildwest I like the sound of that! I made this again last night and added 1 1/2 teaspoons of green curry paste when I blended the cashews. WOW, what a difference that made. I cooked the whole meal in a LIVE broadcast on Hang With. In the last 7 minutes of the show, my teen and husband came home and tasted it right in front of everyone. It was a hit!

I have to clean out my fridge so I think I'll try this but maybe some lemon pepper or just lemon? I also think curry powder goes really well with mayo so maybe that would brighten it up? I'd also put more greens in mine. But thanks for shaking things up!
I have to keep nuts to a very low minimum in my diet but can have lots of beans. So I made my curry sauce with 1 can of chickpeas including the aquafaba instead of the nuts and doubled the sauce recipe. I also just used an immersion blender and it seemed less messy . I love these ipot recipes because they are quick to do after work. Now I am thinking of buying TWO ipots.

Sorry haven't made this yet but my inclination would be chunkier onion, 1/2 to a whole seeded jalapeño minced for added complexity and for the gal who didn't want potatoes on her rice, add equivalent amount of garbanzoes. I second the addition of rasins, too! looking forward to making this when I get an IP...

I'd add some veg stock instead of water into the cashews and a pinch of medium hot chilly - this will just give a hint of hot spice to notice but not blow off your head for the more sensitive ones

It would probably be even better, a little higher in fat, but just as tasty. I made this for dinner tonight and we have just enough leftover for lunch tomorrow. It's definitely a meal we all come back to for second helpings.
My husband wants to know what store is the "Foody Mart". We live in Texas so we have a HEB too but it being in Uvalde it doesn't carry as much as Whole Foods or Sprouts.
I refer to any higher end grocery store as a “Foodie Mart”, like Whole Foods Market, HEB’s Central Market, Sprouts, Natural Grocers, Wheatsville, even the run of the mill natural health store.

Hello, I am a new Instapot person and I thought this recipe sounded good for my dinner tonight. Here's the problem: I do not want to go to the store. So my solution is to substitute. Instead of potatoes I have cauliflower and instead of carrots I have mushrooms. Instead of spinach I have kale. I also thought that I could easily throw in some chick peas at the end where I add the sauce. What do you think. Also, I really enjoyed your cooking show. Keep those instapot recipes coming. :)
Nikki Books Well I say, "GO FOR IT" One word of caution: that cauliflower will get tender with one minute of pressure cooking and then you'll need to do the 'quick release method' to stop the cooking process. If I were standing in your kitchen tonight, I would use the Sauté mode on the medium heat setting to cook the mushrooms, cauliflower and kale. Cook them just as you would if you were cooking them in the skillet. After you have the sauce poured over the veggies and it has thicken, you can use the Keep Warm mode to keep dinner hot until your ready to eat.

+Anneke Verest - Bax Most definitely, you can make this on the stove-top. The original recipe was a stove-top recipe that I simply converted for the iPot.

hdezmelissa Actually the cashews work to make the thick and creamy. It doesn't taste like cashews at all. What do you use now to make cream sauces?
hdezmelissa Chef AJ is telling people to substitute any white bean for the cashews in her cookbook to lower the fat. I've done that a number of times and really can't tell much difference. When I try this one I'm gonna use cannelini beans.

+Sean Sutton If you don't mind the higher fat content in coconut milk, then go for it. In my version of this recipe, the cashews are enough fat bombs for me. Since shooting this video, I have tweaked this recipe and started adding a good & spicy green curry paste when blending the sauce. It kicks up the sauce quite a bit without being overpowering. My teen son has learned he really likes the heat of green curry paste. SCORE!

Michele Coccaro Now the curry amount is GOOD! If you want to make it spicy hot, which is what Max was referring to, add the minced ginger dead last in iPot. That's what made it spicy to me when I tasted the sauce fresh from the blender pitcher. Taste it for yourself and you'll get what I'm saying. Then decide if you still want to add the Garam Masala.
Hi! Just found your channel and subscribed; love it. Question: Isn't this considered a side dish because there are no legumes or tofu or whatever. It was my understanding that to have a balanced vegan meal, a legume or "protein" type dish, grain and vegetable is needed. Thanks for your feedback.

I make a meal almost like this but I add in a little bit of tomato paste and some times cilantro. Looks like my kinda meal! Only one of my kids likes Indian Dishes. The girl runs when I open my spice cabinet :( I really love kids blunt honesty. I don't want them sugar coating something to avoid hurting my feelings! at least not with my cooking. Practice makes better.
beangirl28 That's so true! Max's taste has changed here recently. He's been wanting spicier foods, asking about jalapeños and hot sauces. It's exciting to know I can start taking our meals up a notch.

Jill, I'll bt you could try making this recipe with some hot curry powder. What d'ya think? You'll need to go to an Indian market to find it or buy some online. If you do use it, don't go overboard. Hot curry powder is hooooot. LOL. Start low and add more if you need it.

ok, Jill your son is so cute. I have twin 15 year olds and we're working on making the vegan transition. My boys have terrible acne (and they eat meat and dairy) but your son's skin looks amazing. Do you think it has to do with the vegan lifestyle?

Instead of wasting the veggie broth down the sink, why not use it, instead of water, with the cashews? I would think this would be really good with coconut milk, rather than making cashew milk (and wouldn't require a blender).
