It also makes your tree sturdier against wind, etc. I had a gardener once hit one of the rootstocks of my mango tree with a gas powered grass cutter, the rootstock was cut but the tree survived because it had other rootstocks to keep it alive

In fruits idk but in flowers yes. It affects the color, flower size in hibiscus
