    Corned Beef On The Smoker
    Here's the Smoked Corn Beef and Cabbage recipe
    Remove the corn beef brisket from the packaging and rinse under cool water. Season the outside with Salt, Black Pepper, & Garlic on all sides. Let this mixture work on the corn beef for 30 minutes while the smoker is coming up to 250 degrees.
    Once the cooker is up to temp, center the corn beef brisket and smoke for 2 hours. After the corn beef has smoked for 2 hours, place it in a large pan and add 32oz water. The water should come up ¾ of the way on the corn beef.
    Place a meat probe into the brisket -- I used the ChefAlarm found here: bit.ly/1iHBnjn - cover the pan with aluminum foil.
    Bump the heat up to 300 degrees for the remainder of the cook.
    Continue cooking until the internal is 175 degrees about 1 1/2 hours. At this point add the vegetables, cover the pan again and continue cooking until the final temperature of 195 degrees is reached about 1 ½ hrs. Allow the corn beef to cool about 15 minutes on cutting board before slicing.

    I cooked this recipe yesterday. The corned beef was good but the big surprise was how flipping fantastic the veggies were!
    After that I smoked a 5 lb stick of Bolognese per your video.

    3-17-21 Made this today. Smoked two corned beef briskets, @8 pounds, and two heads of cabbage as I invited friends and family for dinner. I don’t normally spring a new recipe on guests but have tried enough of your recipes to be confident in the results. I have also smoked corned beef in the past but the concentration of salt was a turn-off for some folks. The water bath was the ticket to leach out some of the salt and provide a broth for the veggies. Dinner was a huge hit; the corned beef was perfectly done, tender, and juicy. The veggies picked up a lot of flavor from the broth and the smoked cabbage just amazed everyone. If you ever find yourself planning a visit to the Darlington, South Carolina area, let me know, I’d be more than happy to buy you a beer or six.

    I just used this as inspiration for my cook tonight. AP on the flat, smoked on oak and apple wood over open coals, then finish with a foil wrap with beer, instead of the pan and water. It turned out excellent. I'd like to see more pit barrel cooks. I love watching your videos Malcolm.

    Edit: I feel like a kid a few days before Christmas. Can’t WAIT to get this going on Friday! Malcom, I’m am so sure that your recipe is great that I’m doing not one, but THREE briskets, one of which I’m going to step on pretty heavily heat-wise for the pepperheads amongst us. Also, I’m thinking of crumbling some crispy bacon down into that cabbage with the butter and AP seasoning) or maybe do that on 2 of the 4 heads. Thoughts, anyone? 😎

    This is amazing. Corned beef flat is one of my favs. Used to make them in a crock pot, just rinsed and put in.
    With smoking these I found the first time got dry and tasted salty.
    I love the use of water after a few hours of smoking. Only thing I would change is I have a cast iron pot, this will work great.

    This is the only way to cook corned beef. The cabbage was meh, I prefer to toss it in the water with the beef. Also, I tossed applejuice, bbq sauce and some cayenne pepper in the water bath. What a treat, thanks Malcom.

    This guy is great. If your flat came brined, I always leech out the salty brine first by covering it with water . 6 to 8 hours with several changes of water. Then dry rub and cook as Malcolm instructs.

    Did you add more water when you tossed in the veggies? I didn't see it, but it seemed like the water level tripled once it was at 195°. I'd only assume you added some more water. If so, how much? Thanks!

    Corned beef:
    1. Smoke at 250 for 2 hours
    2. Move to pan, add water, insert probe, set to 190, set maker to 300, cover in foil, smoke for 1 hour
    3. Add cabbage open top smoke for 1.5 hours
    4. Cover top of cabbage and add veggies to pan with corn beef, smoke everything for 1-2 hours until corn beef is 190 and veggies are tender.
    5. He says total time 4.5 hours. I’m counting 6.5?

    This looks so good, I wonder what a point end corn beef brisket would taste like? Got to make this soon. Sometimes I miss my Yoder pellet smoker for making things easy but I still prefer an offset for smoking. Great video!!!

    Do you need to soak the corned beef before? Or can you just rinse it of real good? Worries about it being to salty if you are adding a salt rub on it.

    I'm planning on doing this next week so I looked up your channel and here it is! I'm going to brine my own brisket though. My question to you is, after smoking it would you consider it pastrami? I found out in my research that apparently the difference between corned beef and pastrami is that one is boiled and the other smoked. I can't decide what to call it since I don't plan on using the typical pastrami seasonings or steaming the slices to serve. I'm just smoking instead of boiling. What do you say Malcom?

    That looks so amazing. I gotta say though, one thing I don’t get (and I’m asking, not bein a critic): if yer doin something in a roasting pan, and yer gonna cover it air tight with foil and everything, why put it on the grill? Wouldn’t it be easier to do in the oven and you’d have the exact same result? Can’t figure that out 🤔.... But lord does that look just incredible!!!

    made your recipe for the Corned Beef Brisket (it came out so tender, with that delicious "smokey" flavor and just the right amount of seasonings). It was the BEST Corn Beef Brisket I have ever eaten! I also did the "smoked" cabbage. My family & friends are looking forward to their next serving! IT'S REALLY REALLY DELICIOUS. I am in LOVE with the way you make that SMOKED CABBAGE. Thank you so much for sharing! :-D
    Additionally, is it possible to SMOKE a Turducken? Or will the variety of different "meats" (turkey, chicken & duck with ground Sausage) cause a cooking conflict? If you can "smoke" a turducken...can you please do a tutorial? Most people cook them in the oven, but I think that the "smokey" flavor will make the Turducken taste even better. I have liked you and subscribed to your channel! ;-D

    OK so I did this exact recipe and followed your steps to a T but my brisket came out really tough. Great flavor and the veggies were perfect, the brisket was just so tough. I cooked on an Acorn char griller and then I placed everything in a pan wrapped it and cooked it in a Vision ceramic cooker at 300. Any thoughts?
