      About 3 drops of liquid rennet is perfect! Thank you! It feels so good to have the cast off and everything is heading in the right direction!

    Can I use cultured buttermilk powder to make the cultured cream cheese?

    I strongly disagree with heating or boiling the milk when using citric acid.
    Heating the milk above 47 deg cooks the proteins making the curd grainy. Which means you need to make emulsifier.
    The curd will seperate long before boiling temperature.
    Only heat the milk till its warm.

    Too much work. Plus yours isn't organic grass fed. Easy to buy, grass fed organic

      Where I am in Canada we do not have access to organic cream cheese but I do have access to raw, organic, grass fed milk.

      To each his own! Our cow actually is fed only grass on organic grasses so this works well for us!
