So did you have to cut out the old ball bearing style race in the top (with the dremel tool) so you could install a tapered race and bearing?

Yes. Hindsight I should have just kept it as is but I wanted to remove them because of powder coating and not have to worry about losing the ball bearings when servicing them. I had to use the dremel to create a couple relief cuts to make removing the race easier.
