    I grew up in Melbourne, Australia with a Dutch Mother/Grandparents. As kids, my Opa would come and pick up my brother and I every weekend and take us for a treat somewhere. There was a local market where a Dutch lady had a Poffertjes stall. It was our absolute favourite. Dank je wel!

    They used to serve poffertjes with a dolllop of jam and a scoop of ice cream in wedding receptions in Indonesia in the 1990's - 2000's. Such a highlight of my childhood. It's kind of hard to find them these days, even harder to find the good ones. I guess i have to make them myself, thanks to this video.

    LOVE these! Was introduced to them at a Christmas Market during the time I lived in northern Germany. Oh, the wonderful smells that just brought me to where they were being cooked! I remember so well savoring each bite of these, covered with the powdered sugar! Thank you for sharing this!

    Made these tonight with my son who absolutely loves all things Dutch! Easy to follow recipe and it worked beautifully (we did not have buckwheat flour so used only all purpose flour and they turned out great). The yeast batter was so satisfying. Will need more practice to get the flip down. Thanks for this great video and recipe!

    Poffertjes are absolutely wonderful. It's hard to explain the flavor and texture. They are in concept sort of pancake-like, but very much their own thing. They are a joy.

    Ich bin als Deutsche mindestens 2-3 mal im Jahr in den Niederlanden und liebe Poffertjes. Auf der Suche nach einem originalen Rezept bin ich auf allerlei Unsinn gestoßen. Dieses Rezept ist wirklich super und deine Art, wie du es erklärst einfach klasse!
    Wenn ich sehe, dass Niederländer ein Rezept aus einer Fertig-Mischung mit Wasser hier einstellen, dann finde ich das echt traurig….

    I used to live in the Netherlands many years, actually, is my second home, many dutch people love to eat The Poffertjes as a dinner, by the way dinner in Holland is around 5.30 pm. It is delicious at all!

    I'm so glad I found your video. I love poffertjes and it's really hard to get them in Indonesia. Poffertjes is normally served at weddings, though. But now I get to make them at home and enjoy them whenever I like. Thanks so much!

    Nice video, the only one so far I've seen using 50% buckwheat flour. For most of 25 years I've been making them from store bought mixes with presumably only small amounts of buckwheat. This weekend I made it with 50% buckwheat flour as well for the first time but used sourdough for over night fermentation. A completely different taste to regular poffertjes without buckwheat, so much better!
    I think us Dutch people stopped using buckwheat because of the price and availability but I found a toko where it's cheap :)

    My grandson absolutely loves an Australian cartoon called bluey. In it they have an episode where they go to the market and a gentleman is selling pofferjies.
    I have an ableskiver pan and I think I might have a go at making some for him. I do think the ableskiver has smaller divots/holes but the flavor should be there. Thank you for the beautiful recipe 😘

      You'll be fine with an Æbleskiver pan. I think they are actually slightly deeper than a poffertjespan. But, it will work great!

      I reduced the yeast, probably in my area the yeast is stronger.

    Thank you! I love these with a squeeze of lemon too it really tastes amazing with either the sugar or honey drizzle. There used to be a cafe near me in Sydney that made these fresh daily and I became addicted - can’t find them anywhere else in cafes so making at home is super.

    As you saw, the outer side bakes a little slower than the middle. This is why I start with the outer side, putting the batter to make my way to the centre. This way, they all get evenly baked. 😊
    Moreover, they taste even more delicious when you bake them in butter in stead of oil!!

    You could lift the funnel slightly to let air out through so that the batter can flow through with ease :)

    It's really hard to find a poffertjes pan where i live; would a takoyaki pan work? Would it be slightly undercooked in the middle if the hole is too deep?

    This is interesting. Thank you for a wonderfully simple video! I just ran across a poffertjes pan at a discount store. I got one. It is a little smaller than yours. Mine makes 15. Maybe it will heat better on the stove, being smaller.
    I had expected these to be an oven thing, not a stovetop cook. Can you heat the pan in the oven to start with?

      I have never preheated the pan in the oven, but I guess you could. But, unlike steak, the pan doesn’t have to be red-hot.

      Thank you, I'm glad you liked the video, Annabel! For this recipe, I used room-temperature milk. When I proof yeast for bread, etc. I use 110F (44ºC)

      Depends, if the pancake mix has baking soda/powder, there may be too much leavening. I would not do that.

    thank you for this! very helpful. i LOVE poffertjes. one of my favourite memories was when i was teenager living in The Netherlands (i'm Australian) i rode my bike with my friends in the rain to the beach and sat in restaurant and had a lekker plate of poffertjes - magic pillows of comfort!
    do you think it's possible to make this ahead of time? maybe night before? or will this affect the yeast/rising?

      Thank you!! I have never done this, but if you store the batter in the fridge rather than at room temperature, it’ll slow down the productivity of the yeast. That might help you make the batter at night, and then cook it up in the morning. You’d have let it get to room temperature for 15-30 minutes first.

    Lovely video! Just need some advice: my daughter has got the same cast iron pan for poffertjes. The problem what she encounters - these pancakes get stuck very quickly to the cast iron. Could it be the mix (We bought it from the Dutch food shop) or the baking temperature of the pan or maybe not enough oil? Any advice would be appreciated.

      It's very important to properly season the cast-iron pan. This involves rubbing a VERY THIN layer of oil on the pan, and then backing it for an hour at a high temperature. Repeat this three times. The seasoning will help make it stick less. After that, don't wash it with soap, and make sure it's bone dry before putting it away.
      Of course, it could also be the temperature of the pan, but my first instinct will be that it's not seasoned enough.

    I usually bought in a package at the supermarket whenever I am in Belgium, Bu put back home in bali, there’s a similar type of pancake made of rice flour and coconut milk, in a way is reminds me of apam India

    Nice Channel, subscribed! If the outer part of the pan does not get so hot as the inner you might want to start with the batter there to get a consistent cook 👍

    Similar to aebelskivers. Only difference is aebelskivers are cooked in round balls, harder to master. 2 pointed wood sticks are what I use. Great for filling inside tho. I like custard inside and chocolate outside, its like a filled donut hole.

    poffertjes are amazing, but it's pretty involved, so the bagged pre-baked ones make sense, it's quite a hassle to make them
    but yeah, different league in quality/taste of of end product.
    but the pre-made ones are great if you add some cheese or spek

    I think I've had poffertjes maybe 5 times in my life and I'm 75 years old. I have a poffertjes pan (there's also a Japanese variety of them). My wife orders poffertjes with "advokaat". She's Mexican but Dutchier than I am. She also NEEDS 2 herrings every other day and likes drop. WTF?
