Betty died- The hate (leftover from Chara from previous timelines) remained and took form, without Betty as a host there was nothing controlling or influencing it's behavior. That's what the monster is that remained after Betty died I think
So I went through the comments to make sure I don't explain something that's already been explained. So plenty have people have already said it's Hate not Bette, & they are correct. One person said it was from Chara & that's actually incorrect. At the end of season 1, it's revealed the hate that was consuming Chara was actually Frisk's. I don't know the explanation on how, but Frisk was somehow removing the hate from themselves with each reset. The thing is, it didn't exactly vanish. It went to Chara & possessed him. When Frisk replaced themselves with Chara, the determination Gaster extracted from him & the hate that Bette consumed were all still present. After Bette gets iced, the hate is all that's left & basically uses what's left of her body as physical form. Obviously as the fight progresses the pink in it, from Bette, is replaced with red as it grows stronger. This is all because the hate is from Frisk, whose soul trait is determination. It's also why it's form becomes more masculine, since Frisk is a dude in Glitchtale. So yeah, if we want to get technical with true forms, Bette's true form would be what she looked like before she died the first time. And the Hate is from Frisk. Also, watching them fight at their peek, Frisk actually seems stronger than Chara, to me at least. Now obviously since he realized that Asriel could be saved he opted for a more tactical approach, which is why he sacrificed himself so that Chara could bring Asriel back to his senses. In the end, Frisk was right & it worked. If only he could see the aftermath. On another note, I think it's highly likely that, given more time, the Hate might have gradually started to look like Frisk. Interesting little thought.
