I have a gas grill and found what are called smoke tubes you fill with pellet wood and they are a game changer I’ve smoked cheese and bork but on a gas grill have to block the back of the grill off with something I used some chicken wire fence and aluminum foil to trap the smoke from poring out the back have a digital thermometer for grill air temp and one on the meat. Now I don’t need a second grill and it saves me from needing to build the smoker and it only cost $14 on amazon for two it’s amazing how well it works.
Only if you want corned beef. Smoked is just traditional bbq brisket. Brining makes it corned beef. Brining and smoking makes it pastrami. Happy cooking!
