Plus-up could be some thin slices of apple for a little more crunch. Hard to beat a waffle peanut butter and apple sandwich.
Cherry compote would be a good idea, also if you blended the peanut butter with garlic, ginger, chilies, fish sauce etc. to make it a peanut sauce
