      This Old Tony i eat machine oil and chips on a daily basis lol and im still alive after 20 years. The way i figure the oil is good for the heart and liver , etc. And for the chips the way i see it is its like running a brillo pad through your kidneys and cleans every lil hard to reach area. So people live a lil and take a squirt or two of WD40 it will keep the insides running smooth.

      @carlyoung123 You sound like quite the character, lol. I love it. Wish I could say the same about the non-stick medical coating I sprayed for five years. Pretty damn sure it permanently dulled my sense of smell, definitely wouldn't recommend eating it. I shoulda been a machinist.

    Alex, when I worked in a pizza parlor that used a mechanical pizza roller, we used rice flour to keep the dough from sticking, as it doesn’t absorb the moisture. It works better than corn starch, and we just dusted the dough before putting it through the rollers. This may solve your problem, and the rice flour would better fit the flavor profile of ramen than corn starch.

    The reason I love this channel so much and why I think it is much different than most is you take the time to break things down, you pay attention to every little detail not just in what you cook or what you do but also in the production and editing in the videos themselves. I enjoy youtube colabs like this, this one has been especially interesting having worked as a professional cook for 20 years along with voc school for welding/fabrication with 1 year in the field coupled with heavy interest in learning machining and being a diy junky. I also love making pasta! Me and my girl make raviolis for christmas presents. Our home kitchen becomes a ravioli factory for the better part of a week around xmas time! I gotta say, the old atlas 150 hand cranker has suited us well but that machine is a work of art! That ramen too. This series checks so many boxes. Well done!

    I've been waiting for this video for quite a while. Came here from ToT, and the way you do things I'll probably be staying for quite a long time. The other week I made Lasagne with your recipe from the 10 chef skills video, and boy that was probably the best I've ever had. Adapting was by far the most useful, because I had a vegetarian at the table, so that obviously posed a difficulty, but it still came out amazing. Thanks for your videos, you're pretty much the only channel on TH-cam which made me want to cook something, so keep up the good work!

    Alex! How about a dusting feeder that's mounted across the feed ramp or above the roller and is shaken slightly with every movement of the cog teeth?😊

    • @mspeir
      @mspeir 6 ปีที่แล้ว +8

      Michael Berthelsen Like those old flour sifters that scraped a wire across a mesh screen when the handle was turned, but horizontal and directly geared to the feed mechanism. 🤔 That just might work!

    • @terryhickman7929
      @terryhickman7929 6 ปีที่แล้ว +2

      My suggestion exactly, only you said it better. :)

    • @punk105
      @punk105 6 ปีที่แล้ว +1

      Michael Berthelsen that's kind of what I was thinking might make it a bit cumbersome though

    • @JesseCohen
      @JesseCohen 6 ปีที่แล้ว +1

      That main toothed gear is large enough to slave to. It could provide the turn to a removable dusting attachment, perhaps with a oscillating plate that does the same as a wire on mesh. Kinda like the trimmer on the back of a electric shaver. The slaved gear could be made to snap back, disengaging the function when not needed, like during initial dough loading to start and at the finish.

    • @jr-fw9hj
      @jr-fw9hj 6 ปีที่แล้ว +2

      Given the number of times he would be re-rolling the same lump of dough, adding corn starch to it every pass is probably not the best solution. I would add a second fork to the front side of the take-up roller mechanism, so that a roll of wax paper could be mounted. Then you just pull the first layer of dough over the wooden roller and pull wax paper over it, the rest of the wax paper would wind itself in between the layers of dough as you go. If you wanted to go wild, you could add a wax paper collection roll to the supply side roll mount, and wind up the paper for reuse as you pull the dough off the back roller. No waste, and no added ingredients to the pasta. Put on a motor and a couple of feed fingers, and you've got an industrial grade automated pasta machine :)
      I'm sure T.O.T. could bang out the design easily, but if someone wants to email me the cad file I could redesign the plastic liners and feed chute for the new parts in about 20 minutes. Tony wanted to redo the liners anyway do to the material related errors he had in production.

    Alex thanks for getting me thru quarantine. I'm an American expat living in Paris now. I had to comment though, the most French thing about this video is you having this beautiful new amazing pasta machine, but still find something about it to complain about 😂😂😂 thanks and keep the videos coming.

    I´m happy that you found This Old Tony. He´s a god among men and TH-cam, the best humor, camera excellence, editing beyond normal powers of mortals, vast knowledge of everything technical-mechanical and so on, machining master-skills. He should of course be given a +100 mill dollar\year contract with any TV station of his liking.

    of all the TH-cam content creators I follow I never would have guessed that you two would get together for a collaboration. It was brilliant, and some of my favorite TH-cam content ever. Thank you!

    I can't believe I only recently found Tony's channel through Alex, as a long time subscriber to AvE. Anyway I've enjoyed going through his videos, he's got some pretty unorthodox methods of cutting metal stock. And I've learned a lot about making tools, even though it's going to be many years before I have my own machine shop.
    Also I couldn't stop smiling watching this video.
